1 cup confectioners' sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt

3 ounces cream cheese, softened
1 cup confectioners' sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 cup finely chopped pecans
1/2 cup sweetened shredded coconut
TOPPING:
1/2 cup semisweet chocolate chips
2 tablespoons butter
2 tablespoons water
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. , Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Make a deep indentation in the center of each cookie. Bake at 350° until the edges just start to brown, 10-12 minutes. Remove to wire racks to cool completely. , For the filling, in a large bowl, beat the cream cheese, sugar, flour and vanilla until smooth. Add pecans and coconut. 1 cup sugar
2 large eggs, room temperature
1 tablespoon vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 package (10 ounces) miniature semisweet chocolate chips
1 cup finely chopped walnuts, optional
1 package (10 to 12 ounces) white baking chips

Steps:

  • Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Confectioners sugar for rolling and dusting

Steps:

  • In bowl, combine flour, baking powder, and salt and mix together. Melt 1 cup of the chocolate chips in microwave or over double boiler on the stove, and stir until smooth. Steps:

This recipe came from my MIL been making them for years. Two ways to make them with Marshmallows on top (for the kids) and frosting drizzled over. Or no marshmallows (for adults) and just choc. frosting with coconut sprinkled on top. Either way they are like little cakes.

pre-heat oven 350 degrees
have ready 24 marshmallows cut in half

Steps:

  • 1. SIFT TOGETHER: 1 3/4 sifted flour 1 C sugar 1/2 C Cocoa 1/2 teaspoon baking soda 1/2 teaspoon salt ADD: 1/2 C soft shortening 1/2 C evaporated milk 2 Tablespoons water 1 egg 1 teaspoon vanilla extract Beat three minutes w/ electric mixer at low speed or by hand. Stir in 1/2 cup nuts (if desired) (I Never put them in) Drop mixture by teaspoonfuls about 2" apart onto greased cookie sheet.
  • 2. Bake near center of oven 10 min. Cookies will be slightly soft in center. Take from oven and quickly place a marshmallow half, cut-side-down, on top of each hot cookie. Let stand until cool. Spoon 1- 2 teaspoons of choc. frosting over each cookie.
  • 3. FROSTING: Stir over low heat: 1 Cup of semi-sweet chocolate pieces until chocolate melts. Add 1/2 cup evaporated milk. Take off heat and stir in until smooth 2 1/2 cups sifted confectioners sugar. I omit marshmallows and put frosting on top then sprinkle coconut on top. Used to use the marshmallow when my kids were small. Either way they are good.
