½ cup butter
¼ cup olive oil
1 teaspoon dried parsley
1 teaspoon dried basil
¼ teaspoon dried oregano
3 cloves garlic, minced
¾ teaspoon salt
1 tablespoon lemon juice
4 breast half, bone and skin removed (blank)s boneless chicken breast halves, sliced lengthwise into thirds

Steps:

  • In a large skillet, heat the butter and oil over medium high until the butter melts. Add the parsley, basil, oregano and garlic and salt and mix together in the skillet. Stir in lemon juice.
  • Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter can be added if needed.

2 lbs boneless skinless chicken breasts
1/2 lb margarine
4 garlic cloves, minced
2 scallions, minced
1 tablespoon parsley, chopped
1 teaspoon dried dill
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the chicken breasts into approximately 2"x1" pieces and place in 9"x13" baking dish.
  • Melt the margarine in a saucepan over low heat.
  • Add the garlic, scallions, parsley, dill, oregano, salt and pepper and cook for two minutes.
  • Pour the mixture over the chicken pieces.
  • Bake for 10 minutes, turn chicken pieces over, and bake for another 10 minutes.

I got this from Kristen on allrecipes. It's different than the ones I've seen on here. The worcestershire sacue adds a little something, I think. I usually don't broil the chicken, but sauté it in olive oil. Make sure to boil the marinade for at least 3 minutes since it's had raw chicken in it. I serve it over brown rice.

2 tablespoons unsalted butter
1 tablespoon quality olive oil
1 tablespoon minced fresh garlic

1/3 cup dry white wine
2 tablespoons chopped fresh parsley

2 teaspoons basil
2 teaspoons parsley
4 cloves minced garlic
