* 1 4-oz. frozen tilapia filet, thawed
* lemon juice (sprinkled on filet)
* generous sprinkling of Mrs. Dash grilling blend

Steps:

  • Spray baking pan with oil or wipe pan with olive oil. Place filet in pan and sprinkle on the lemon juice and then the Mrs. Dash grilling blend. Bake in a 375-degree oven for 12-13 minutes. Serve with mashed sweet potatoes and a vegetable or salad.

I adopted this recipe in the recipe adoption of February 2005. The only major change I made to this recipe is to change the cooking method from microwave to oven. I prefer to cook fish in the oven, and it only takes a couple of minutes longer. I also added measurements to the spices. DH doesn't like curry powder, so I made the curry powder optional. This recipe is easy to double for 2 servings.

1/2 lb fish fillet (any kind-I used Tilapia)
2 tablespoons lemon juice
1/4 teaspoon curry powder (optional)
1/8 teaspoon cayenne pepper
1 clove garlic, minced
1/2 teaspoon Mrs. Dash seasoning mix
1/2 teaspoon chicken bouillon granule
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Place fillets in a baking dish sprayed with cooking spray.
  • Sprinkle with lemon juice, curry, cayenne, garlic, Mrs. Dash, and boullion.
  • Drizzle melted butter over the top.

4 Tbsp mrs. dash® garlic & herb seasoning blend
4 6 oz. tilapia fillets
8 oz frozen chopped spinach, drained, patted dry
1/2 c spanish onion, chopped into 1/4 inch dices
3 Tbsp olive oil

Steps:

  • 1. Preheat oven to 375 degrees
  • 2. Rub tilapia fillets with 1 1/2 Tbsp. olive oil. Toss remaining olive oil with spinach and onion in separate bowl.
  • 3. Sprinkle Mrs. Dash® Garlic & Herb Seasoning Blend evenly on each fillet.
  • 4. Lay spinach and onion mixture in 4 lines on a baking sheet. Top each with a tilapia fillet.
  • 5. Bake 5-7 minutes depending on fillet thickness. 7 points per serving
