This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.

1 (8 ounce) package wide egg noodles
2 cups small curd cottage cheese
1 ½ cups sour cream
½ cup white sugar
½ cup raisins
3 large eggs, beaten
½ teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.

When I lived in Pittsburgh, Mrs. Markovitz was my downstairs neighbor and landlord and a great cook. The smells from her house were amazing. This was one of her specialities especially around the Jewish New Year. The topping makes this irresistable!

1 lb medium noodles, boiled and drained
6 eggs, well beaten
1 can pineapple tidbits, drained
1 tablespoon lemon juice
1 cup sugar
1 teaspoon vanilla
1/2 cup margarine, melted
1 pinch salt
1 tablespoon margarine, melted
3/4 cup corn flake crumbs
1/3 dark brown sugar

Steps:

  • Boil and drain noodles.
  • In a large bowl, mix all ingredients except the topping.
  • Pour into greased rectangular pan.

Steps:

  • Preheat oven to 350 degrees F. Butter a 9 by 13 by 2-inch baking dish. In a large bowl whisk together eggs, 1/2 cup melted butter, sour cream, 1/2 cup sugar, 1/2 teaspoon cinnamon nutmeg. Toss in the noodles, raisins and orange zest. Pour mixture into prepared pan. In a small bowl mix together remaining 1/4 cup sugar with 1/2 teaspoon cinnamon. Sprinkle sugar mixture over noodles. 1/4 lb butter, melted
1/2 cup orange marmalade
1/2 cup pineapple preserves
1/4 cup orange juice
6 eggs, well beaten
1 cup sour cream
1 cup golden raisin

  • Cook noodles in salted water until tender; drain.
  • Put butter in bottom of baking dish.
  • Mix noodles with the preserves, marmalade, juice, eggs, sour cream, and raisins.

1/2 cup pareve margarine, melted and cooled, plus more for muffin tin
1 cup unpeeled, grated Granny Smith apple (1 medium apple)
1 cup peeled, grated sweet potato (1 small potato)
1 cup peeled, grated carrot (about 2 medium carrots)
1 cup matzo meal
1 teaspoon coarse salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/2 cup sugar (optional)

Steps:

  • Preheat oven to 325 degrees. Lightly brush muffin tins with margarine. Set aside. In a medium bowl, combine 1/2 cup margarine, apple, sweet potato, carrot, matzo meal, salt, baking soda, cinnamon, nutmeg, and sugar. Stir to combine. Divide mixture evenly between nine of the prepared muffin tins (three will be left empty).
