8 ounces elbow macaroni, cooked (any leftover pasta will do)
1 lb extra lean ground beef
1 medium onion, chopped
1 green pepper, chopped
1 1/2 cups ketchup
2 tablespoons tomato paste
1 cup water
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic
1 teaspoon italian seasoning

Steps:

  • In a large pot, cook ground beef, onion, and green pepper.
  • Drain and return to pot.
  • Add remaining ingredients and cook until heated thru.

2 tablespoons vegetable oil
2 medium yellow onions, minced
1 teaspoon minced garlic
12 Roma plum tomatoes, seeded and quartered
3 pounds huckleberries, or blueberries, strawberries, blackberries or any combination
2 cups dry red wine
1 cup red wine vinegar
2 oranges, zested and juiced
8 juniper berries
3 sprigs fresh thyme
1 teaspoon black peppercorns
2 bay leaves
1 cup brown sugar
2 tablespoons tomato paste
1 teaspoon salt
1/4 cup gin (optional)

Steps:

  • In a large saucepan heat the oil over medium high heat. Add the onions and cook until they begin to caramelize, about 6 minutes. Add the garlic and cook 2 minutes, then add the tomatoes and cook, stirring often, until they start to release some of their moisture, about 5 minutes. Add the huckleberries to the pot, reduce the heat to medium low, and cook for 5 minutes. Add the remaining ingredients, except the gin, and stew over medium heat until the mixture is thick and has reduced in volume by nearly 3/4, about 15 to 20 minutes. Stir in the gin and cook an additional 3 minutes.
  • Strain the ketchup into a small bowl and allow to cool before serving.

This is my grandmother Mimi's recipe. It has always been an excellent and inexpensive meal.

¼ cup vegetable oil
1 onion, roughly chopped
4 potatoes, peeled and cubed
½ teaspoon salt
2 green bell peppers, cut into 1 1/2 inch long strips
½ teaspoon ground black pepper
1 (16 ounce) package beef kielbasa, diced into bite size pieces

Steps:

  • Heat oil in a large skillet over medium low heat, and stir in the onion. Cook onion until tender and golden brown, about 5 to 10 minutes.
  • Place potatoes, salt and green bell peppers into the skillet with the onion. Cover and fry for 3 to 5 minutes. Stir in ground black pepper. Place the kielbasa pieces on top of mixture, cover and let cook for 15 to 20 minutes, stirring occasionally.
  • Stir kielbasa into the mixture and cook an additional 10 to 15 minutes, or until potatoes are tender. Allow to sit covered for an additional 15 minutes before serving.

1 pound lean ground beef
1 large onion, chopped
2 cups tomato sauce
2 (4.5 ounce) cans mushrooms, drained
2 teaspoons minced garlic
salt and pepper to taste
1 (14.5 ounce) can stewed tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in large saucepan.
  • Meanwhile, in a large skillet, brown beef over medium heat; just before beef is browned, stir in onion.
