1/4 cup evaporated milk
1/4 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground beef
SAUCE:
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2/3 cup evaporated milk
2/3 cup water

Steps:

  • In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. In a large oven-proof skillet, brown meatballs; drain. Combine sauce ingredients; pour over meatballs. Bake, uncovered, at 350° for 30 minutes or until meat is no longer pink.

Steps:

  • 1. In a large sauce pan add cream of mushroom soup (do NOT add any water).
  • 2. Roll ground beef into meatballs, about walnut size or 1"; place them in mushroom soup in pot. Make a single layer.
  • 3. Add salt & pepper to taste.
  • 4. Cook on medium heat, uncovered for about 30-40 minutes until meatballs are cooked.
  • 5. Serve over potatoes, egg noodles or bread. Dad loves it- goes great with green beans.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a baking sheet and a 2-quart casserole dish.
  • Whisk milk and eggs together in a bowl. Add turkey, crackers, onion, salt, nutmeg, and black pepper. Mix well. Shape into 1-inch balls and place on the prepared baking sheet.
  • Bake in the preheated oven until browned, about 20 minutes. Drain meatballs on paper towels and transfer to the prepared casserole dish. Leave oven on.

Steps:

1/2 cup water or 1/2 cup beef broth

2 (10 ounce) cans cream of mushroom soup

Steps:

  • In a large bowl mix together all the dry ingredients(Onion Soup mix, bread crumbs & garlic salt) then add in the wet ingredients(water or beef broth, Worcestershire sauce & egg) mix together then add in the ground beef and incorporate all the ingredients together mix well.
  • Now make meatballs about the size of your palm(maybe about 2 inches round) place all the meatballs in a large skillet and cook at medium high heat until cooked all the way through and browned on all sides.
  • Once your meatballs are completely cooked keep the heat at medium high and then add in your water.   • In a deep sauce pan, heat olive oil over medium high. Add mushrooms and spices for gravy. Saute until browned. Add butter and flour. Cook for one minute. Slowly add beef broth and stir until smooth and thickened. If you are worried about lumps you can reserve some of the broth and make a slurry with that and the flour.
  • When gravy is thickened add the finished meatballs to reheat. Stir in sour cream and heat through. Sprinkle with fresh parsley if you like.

When they were still among us, his mom would make a buffet of all the classic stuff-Swedish Meatballs,Swedish Potato Sausage, "Brunabuner"(baked beans with cinnamon)rice pudding with lingenberries,limpa bread caraway cheese...on and on,for Christmas Eve dinner. I have a few of her recipes, but her Swedish Meatball recipe was not real specific.I found this recipe in a cookbook,"365 Ways to Cook Hamburger and Other Ground Meats" and they are truly good. 4 cloves garlic, thinly sliced
One 28-ounce can whole peeled tomatoes, crushed by hand
Small handful torn fresh basil leaves
Kosher salt
3 tablespoons extra-virgin olive oil, plus more for brushing the baking sheet
1/3 cup wheat berries
1 cup dry brown lentils, rinsed and sorted
1 small yellow onion, finely chopped
4 ounces shiitake mushrooms, stemmed and roughly chopped
5 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper
3 tablespoons tomato paste
3 tablespoons low-sodium soy sauce
2 tablespoons red wine vinegar
4 teaspoons nutritional yeast
1/2 cup fresh parsley leaves, plus more for garnish
2 slices white bread or 1 hamburger bun, torn into small pieces

Steps:

  • For the sauce: Put the oil and garlic in a medium saucepan over medium heat. Swirl until the garlic is just lightly browned and fragrant, about 4 minutes. Add the tomatoes and 1/2 cup water. Bring to a high simmer, then reduce the heat to medium-low. Add the torn basil leaves and 2 teaspoons salt and simmer, uncovered, until thickened, 20 to 25 minutes.
  • For the meatballs: Meanwhile, preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and brush with oil.

  • Put the lentils in a medium saucepan with 2 1/2 cups water. Bring to a boil, then reduce heat to low and simmer, uncovered, until almost all of the water has evaporated and the lentils are soft, about 15 minutes. Remove from the heat, drain and let cool slightly.
  • Meanwhile, heat the oil in a large nonstick skillet over medium heat. Add the onion, mushrooms, garlic, 1 teaspoon salt and a few grinds of pepper and cook, stirring until soft and lightly browned, about 6 minutes. Add the tomato paste, soy sauce, vinegar and nutritional yeast and cook, stirring, until the liquid has evaporated and is slightly dry, about 2 more minutes. Let cool slightly. Clean out the skillet.
  • Transfer the onion-mushroom mixture to a food processor. Add the cooked lentils, wheat berries and parsley leaves. Pulse until the mixture is combined and crumbly but not mushy.
  • Put the torn bread into a large bowl and cover with 1/4 cup of water. Let sit at least 5 minutes to soften. Using a fork, mash the soaked bread into a paste. Add the lentil mixture to the bowl with the mashed bread and mix by hand until fully incorporated. The mixture should hold its shape when squeezed gently.
  • Shape the mixture by hand into 18 golf-ball sized meatballs. Place about 1 inch apart on the prepared baking sheet. Bake until the meatballs are golden brown on the outside and don't crumble when gently pressed, 25 to 30 minutes.
  • To serve, pour the sauce into a shallow serving bowl. Put the hot meatballs on top of the sauce and garnish with parsley.

This is a yummy, easy and healthy recipe born out of the need for something flavorful but within my "cleanse" diet guidelines. Though I used the 85/15 ground turkey, you can use the leaner, and save some fat calories. The mushroom gravy sits great on top of the meatballs which you can serve over brown rice, (how I ate it) or over egg noodles, (how my husband ate it). 1 lb ground turkey
3 tablespoons brown rice flour
1 celery rib
1/4 cup red onion
3 garlic cloves
1 teaspoon ground mustard
2 egg whites
1 tablespoon italian seasoning
1 teaspoon cumin
1/2 teaspoon ground black pepper
1/2 teaspoon sea salt
1 (4 1/2 ounce) jar sliced mushrooms (drained)
1 teaspoon extra virgin olive oil
1 cup chicken broth or 1 cup vegetarian broth

Steps:

  • Preheat oven to 350 degrees F.
  • Chop celery and red onion thinly, nearly a mince. Mince the garlic. Reserve 1minced clove for mushroom gravy.
  • Combine the ground turkey, onion, celery, (2) garlic cloves, spices and egg whites together in a medium sized mixing bowl.
  • Add 2 tbs of the brown rice flour. (You could use about a 1/4 to 1/2 a cup of cooked brown rice in place of flour). After mixing all ingredients very well, shape meat mixture by hand into 8 - 2" to 2 1/2" meatballs.
  • Coat a 9" x 12" casserole dish with vegetable oil spray and place the meatballs into the casserole. Place in the oven and bake for 1 hour.
  • 15 minutes before the meatballs are finished baking, start the mushroom gravy by placing the 3rd minced clove of garlic into a saute' pan with the olive oil and saute' until tender. Add the mushrooms and saute' for a few minutes over medium heat and then gradually add the brown rice flour and stir until there is a coating on the mushrooms. Add the chicken broth and reduce heat. Stir until slightly thickened and let the broth reduce to a gravy at a simmer, about 5 minutes, stirring as necessary.
  • Serve the meatballs and mushroom gravy over hot brown rice or egg noodles.

6 garlic cloves, very finely chopped
2 tablespoons white miso paste
1 medium zucchini (about 8 ounces), coarsely chopped, divided
8 ounces cremini mushrooms, coarsely chopped, divided
2 tablespoons coconut oil, divided, plus more for pan
2 teaspoons kosher salt, divided
1 large egg
1 1/4 cups breadcrumbs
2 tablespoons low-sodium soy sauce, divided
2 tablespoons toasted sesame oil, divided
2 tablespoons chopped cilantro plus 1 tablespoon cilantro leaves
8 cups homemade or store-bought low-sodium vegetable broth
2 small heads baby bok choy, cut crosswise in 2" pieces
8 ounces snow peas
4 ounces white beech or thinly sliced cremini mushrooms
12 fresh wonton wrappers, brushed with a pastry brush to remove excess flour, cut in half on the bias
2 scallions, white and pale-green parts only, thinly sliced

Steps:

  • Pulse ginger, garlic, and miso in a food processor, scraping down sides of bowl, until smooth. Transfer half of mixture (about 2 Tbsp.) to a small bowl; set aside. Add three-quarters of zucchini and cremini mushrooms to food processor and pulse until uniform and finely chopped, about 45 seconds; transfer to a medium bowl. Pulse remaining zucchini and cremini mushrooms until combined, about 10 seconds; transfer to same medium bowl.
  • Heat 1 Tbsp. coconut oil in a large nonstick skillet over medium. Add zucchini mixture and 1 1/2 tsp. salt and cook, spreading mixture flat and stirring occasionally, until beginning to brown and liquid evaporates, about 12 minutes. Transfer to a large bowl. Add egg, breadcrumbs, 1 Tbsp. soy sauce, 1 Tbsp. sesame oil, and 2 Tbsp. chopped cilantro and toss to combine.
  • Heat 1 Tbsp. coconut oil in a large saucepan over low. Add reserved ginger mixture and cook, stirring occasionally, until fragrant and beginning to brown, about 2 minutes. Add broth and simmer until ready to use.
  • Meanwhile, grease a rimmed baking sheet or large plate with coconut oil. Roll heaping tablespoonfuls of zucchini mixture into balls with your hands (you should have about 25). Transfer balls to prepared sheet.
  • Add remaining 1 Tbsp. soy sauce, 1 Tbsp. sesame oil, and 1/2 tsp. salt to broth. Gently add meatballs with a slotted spoon, cover, and cook until meatballs are puffed and cooked through, about 5 minutes. Uncover, add bok choy, and cook until crisp-tender, about 3 minutes. Add snow peas and beech mushrooms, then drop in wonton wrappers one at a time. Cook, tilting pot back and forth to evenly cook meatballs and vegetables (do not stir to avoid breaking up meatballs), until vegetables are crisp-tender and wontons are cooked through, about 2 minutes.
  • Divide soup among bowls, top with scallions and 1 Tbsp. cilantro leaves, and serve.

120 g onions, finely chopped
1 garlic clove
1 tablespoon tomato sauce (ketchup)

40 g bacon, finely chopped
250 g mushrooms, thinly sliced
2 teaspoons cornflour
2/3 cup water
1 beef stock cube, crumbled
1/4 teaspoon dried basil leaves

Steps:

  • Combine, onion, garlic, sauces, mince and breadcrumbs in bowl. Mix through. Shape tabelspoonfuls of mixture into balls, refrigerate in a single layer 30 minutes.
  • Heat oil in frying pan, add meatballs, cook gently until well browned all over and cooked through. Remove meatballs from pan and keep warm.
  • RICH MUSHROOM SAUCE. Add bacon and mushroom to pan where the meatballs were cooked. Stir constantly over heat until mushrooms are cooked. Blend cornflour and water together. Add cornflour and water mix, stock cube and basil to mushrooms. Stir constantly over heat until sauce boils and thickens.
  • Add meatballs to sauce, simmer, uncovered until heated through.
  • Serves 4.

6 - 8 medium homemade meatballs, more on that later
THE MUSHROOM GRAVY
2 slice applewood smoked bacon, chopped
2 Tbsp sweet butter, unsalted
8 oz button mushrooms, sliced; including the stems
1 clove garlic, minced
1 pinch cayenne pepper
1/2 Tbsp dried basil
1/2 Tbsp dried orgeano
1/2 c heavy cream
1/2 c dry white wine (chardonnay, or sauvignon blanc)heavy cream
salt, kosher variety, to taste
white pepper, freshly ground, to taste
ADDITIONAL ITEMS
mash taters, or possibly egg noodles

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. THE MEATBALLS
  • 4. Okay, the meatballs are totally up to you...they could be store bought, or homemade. But, in my opinion, homemade is the way to go.   • 5. THE MUSHROOM GRAVY
  • 6. Add the bacon to a sauté pan, and cook over medium heat, until cooked, but not crispy.
  • 7. Add the butter to the pan.
  • 8. When the foaming subsides add the mushrooms.
  • 9. Sauté until the mushrooms have given up their moisture, and are slightly browned, about 6 to 8 minutes.
  • 10. Add the garlic, cayenne, basil, and oregano, and then sauté for 2 minutes.
  • 11. Make sure to keep the pan active, so that nothing burns.
  • 12. Chef's Note: At this point you can stop the recipe; ignore the wine and cream, and serve these mushrooms over a nice burger or steak. However, if you want the gravy, please continue :-)
  • 13. Mix the wine with the cream, and then add it to the pan. Continue stirring until the liquid is reduced by half, about 4 to 6 minutes.
  • 14. Taste the sauce, and then add a small amount of salt & pepper, (if necessary) and then taste again.
  • 15. Chef's Note: Salt & taste... Salt & taste... our instructor would say to us... How can you hope to be a chef, if you don't taste your work?
  • 16. Take the pan off heat.
  • 17. Chef's Tip: Although the dynamics of the sauce will change, if you're opposed to wine, you can substitute a good chicken stock (not broth).
  • 18. PLATE/PRESENT
  • 19. Place some good mash taters or wide egg noodles on a plate, top with 3 or 4 meatballs, and then cover with the mushroom sauce. A few slices of bread would not be amiss. Enjoy.
  • 20. Keep the faith, and keep cooking.
