1 beef top sirloin steak (1-1/2 pounds), cut into 2x1/2-in. strips
1 tablespoon canola oil
1/2 teaspoon salt

1 pound sliced fresh mushrooms
2 shallots, finely chopped
1/2 cup beef broth
1 tablespoon snipped fresh dill
1 cup sour cream

Steps:

  • Cook noodles according to package directions; drain., Meanwhile, toss beef with oil, salt and pepper. Place a large skillet over medium-high heat; saute half the beef until browned, 2-3 minutes. 2 large onions, chopped
1/4 pound shiitake mushrooms, sliced
1/4 pound oyster mushrooms, sliced

1/2 teaspoon salt

  • In large nonstick frying pan, melt butter and oil. Add onions and mushrooms and cook, covered, for about 3 to 7 minutes or until mushrooms start to soften. Remember, leave the lid on to keep it from drying out. When mushrooms have softened, add lemon juice along with seasonings and sour cream. Mix well. Add cooked pasta and heat thoroughly. Season with salt and pepper, if needed, and serve.

1 (6 cup) package pasta, egg-free ribbon noodles
1/4 cup margarine, vegan (I use Earth Balance, but vegetable oil would work too)
1 onion, minced
16 ounces portabella mushrooms, sliced
2 garlic cloves, minced
2 cups vegetable broth, beef flavored (we use Frontier beef-flavored broth powder)
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon Worcestershire sauce, vegan (you could leave this out, it's not critical, but does add depth)
1/4 cup flour
1 cup vegan sour cream (I use Follow Your Heart)

Steps:

  • Cook and drain pasta according to package directions.
  • Meanwhile, in a large skillet, sauté mushrooms and onions until mushrooms have given up their liquid and onions are translucent.
  • Add garlic and cook for another 1-2 minutes. Remove from heat.
  • In a medium sauce pan, bring broth to a boil. Add salt, pepper and worcestershire sauce.
  • Whisk in flour and continue cooking until sauce begins to thicken.
  • Return skillet to low heat and stir thickened sauce into mushroom mixture.
  • Stir in sour cream (don't allow it to boil) and serve immediately over hot ribbon noodles.

This venison stroganoff is absolutely fantastic - of course, you can use the more traditional beef fillet instead of venison, and any mushrooms you like, but there's something about venison and wild mushrooms that works so well together. Have a go at this and you'll know what I mean! The whole point of this dish is that by the time you start cooking the meat, it will all come together quickly. The meat will be quite pink - cook it for longer if you want but it will go slightly tougher.

7 ounces white rice
Extra-virgin olive oil
1 medium red onion, peeled and finely chopped
1 clove garlic, peeled and finely sliced
11 ounces venison loin, fat and sinews removed, trimmed and sliced into finger-sized pieces
Sea salt and freshly ground black pepper
1 tablespoon paprika
9 ounces mixed exciting, robust mushrooms, wiped clean, torn into bite-sized pieces
Small bunch fresh flat-leaf parsley, leaves picked and roughly chopped, stalks finely chopped
Knob of butter
Good splash brandy
1 lemon, zested
2/3 cup creme fraiche or sour cream
Few little gherkins, sliced

Steps:

  • Cook the rice according to the package instructions until it's just undercooked and drain in a colander. Put the rice back in the pan, cover with aluminum foil and set aside to steam - this will give you incredibly light and fluffy rice.
  • Heat a large frying pan on a medium heat and pour in a glug of extra-virgin olive oil. Add the onions and garlic and cook for about 10 minutes until softened and golden. Remove from the heat and spoon the onions and garlic out of the pan onto a plate. Set aside.
  • Season the meat well with salt, pepper and the paprika. Rub and massage these flavorings into the meat. Place the frying pan back on a high heat and pour in some more olive oil. Add the mushrooms and fry for a few minutes until they start to brown. Then add the meat and fry for a minute or 2 before adding the parsley stalks (you can do this in 2 pans or in batches if your pan is not big enough) and the cooked onion and garlic. Toss and add the butter and brandy.
  • You don't have to light the hot brandy, but flaming does give an interesting flavor so I always like to do this. Once the flames die down, or after a couple of minutes of simmering, stir in the lemon zest and all but 1 tablespoon of the creme fraiche and season, to taste. Continue simmering for a few minutes. Any longer than this and the meat will toughen up - it doesn't need long, as it's been cut up so small.
  • Serve your fluffy rice on 1 big plate and your stroganoff on another. Simply spoon the remaining creme fraiche over the stroganoff, then sprinkle over the sliced gherkins and the parsley leaves. Eat at once!

1 cup instant polenta
4 tablespoons olive oil
2 Spanish onions, thinly sliced
1 large shallot, thinly sliced
2 to 3 thyme sprigs
1 tablespoon minced garlic
Kosher salt and freshly ground black pepper
4 cups wild mushroom mix
12 ounces beef sirloin, thinly sliced
1/4 cup brandy
1 cup beef stock
2 handfuls baby spinach, stems trimmed
Sour cream, for garnish
Chopped fresh parsley, for garnish

Steps:

  • For the polenta: In a medium saucepan, bring 4 cups water to a boil with 1 1/4 teaspoons salt. Whisk in the polenta and reduce the heat to medium-low. Cook, continuing to stir to prevent burning and so there are no lumps, until the polenta starts to thicken, about 7 minutes. Remove from the heat.
  • For the Stroganoff: Add 2 tablespoons olive oil to coat the bottom of a large skillet. Saute the onions and shallots over medium heat until soft, about 4 minutes. Add the thyme and garlic and cook until lightly golden around the edges. Sprinkle with salt and pepper. Add the mushrooms and cook until caramelized, about 5 minutes. Transfer the contents of the pan to a bowl and remove and discard the thyme sprigs.
  • Sprinkle the beef with salt and pepper. Return the pan to the stove and add the remaining 2 tablespoons of olive oil and the beef. Cook until browned on one side, 1 to 2 minutes, then flip and brown on the remaining side, 1 to 2 minutes more. Remove the meat to the bowl with the vegetables. Add the brandy and deglaze the pan, scraping up any brown bits that are stuck to the bottom. Add the beef stock and let come to a simmer. Add the spinach leaves and cook until wilted, then return the vegetable and meat mixture to the pan and heat through. Add salt and pepper, if needed.
  • Top the polenta with the meat and mushroom mixture. Garnish with sour cream, parsley and lemon zest.

1 small red onion, chopped
1 small red bell pepper, seeded,chopped
1 (4 ounce) package mixed wild mushrooms, rinsed
1 tablespoon all-purpose flour
1/4 teaspoon ground nutmeg

1 (14 ounce) can low sodium beef broth
6 ounces wide egg noodles
3/4 cup light sour cream
1/4 cup chopped parsley

Steps:

  • Heat large pot of water to boiling.
  • Melt butter in large skillet over medium-high heat; add onion.
  • Cook, stirring often, until lightly browned, 5 minutes.
  • Add bell pepper; cook, stirring often, 1 minute.
  • Add mushrooms; cook, stirring often, until mushrooms are lightly browned and liquid evaporates, about 8 minutes.
  • Sprinkle flour, nutmeg, salt and pepper over mushrooms; cook, stirring, 1 minute.
  • Turn heat to high; stir in broth.
  • Cook, stirring often, to thicken and reduce slightly, about 5 minutes.
  • Meanwhile, add noodles to boiling water; cook according to package directions.
  • Drain.
  • Place in large serving bowl.
  • Stir sour cream into mushroom mixture; heat until hot, but not boiling, about 1 minute.
  • Pour over noodles.
  • Add chopped parsley; toss to mix.

1/2 pound fresh button mushrooms, halved
2-2/3 cups sliced baby portobello mushrooms
1 package (3-1/2 ounces) sliced fresh shiitake mushrooms
3 shallots, chopped
2 tablespoons butter
3 garlic cloves, minced
1-1/2 cups vegetable broth, divided
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1 cup fat-free sour cream
1 tablespoon minced fresh parsley

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large nonstick skillet over medium heat, cook the mushrooms and shallots in butter for 6-8 minutes or until tender. Add garlic; cook 1 minute longer. , Stir in 1-1/4 cups broth, mustard, salt and pepper. Bring to a boil. 1 cup fat-free chicken broth or 1 cup vegetable broth
1 cup water
1/2 cup chopped onion
2 tablespoons Dijon mustard
1 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon black pepper
2 cloves garlic, minced
8 ounces fresh cremini mushrooms, cut in quarters
1 lb boneless skinless chicken breast
1/2 cup low-fat sour cream
6 ounces egg noodles, cooked

Steps:

  • Combine broth, water, onion, mustard, thyme, salt, pepper, garlic and mushrooms in a skillet.
  • Bring to a boil.
  • Cover, reduce heat and simmer for 5 minutes (do not be alarmed by curdling of liquid).
  • Arrange chicken in a single layer in the skillet, cover, and simmer for 15 minutes (do not boil).

I have been making this for years. Co workers have literally begged me to make this for them instead of sweets. I usually use a mixture of button and baby portabellos, but the exotic mix is good to throw in as well. Make it fancy for a pot luck....toss it with the noodles in a casserole and top with garlic buttered breadcrumbs and bake until they are golden. Looks like you fussed for hours! You could substitute vegetable broth to make it vegetarian.

4 (8 ounce) packages mushrooms
4 tablespoons butter, divided
1 large onion, diced
3 (10 1/2 ounce) cans beef broth (reserve 3/4c.)
6 tablespoons ketchup
3 garlic cloves, minced
2 teaspoons salt
6 tablespoons flour
1 1/2 cups sour cream

Steps:

  • Clean mushrooms and slice.
  • Melt 2 T of butter in a large skillet.
  • Place half the mushrooms and all of onion in skillet and saute until tender.
  • Place in crock pot.
  • Repeat with remaining mushrooms and butter.
  • Place these in crock pot.
  • Add broth (remember to reserve 3/4c.), ketchup, garlic and salt to crock pot.
  • Cook on high 4 hours, or low for 8 hours.
  • Blend reserved broth and flour.
  • Take mushroom mixture out of crock pot and heat on stove top until boiling.
  • Stir in flour mixture until broth is thickened.
  • Remove from heat: stir in sour cream.
  • Serve over buttered noodles or rice.

1 ounce dried shiitake mushrooms
2 tablespoons olive or vegetable oil
1 medium onion, cut lengthwise in half, then sliced (1 cup)
4 cloves garlic, finely chopped
1 pound assorted fresh mushrooms (crimini, shiitake, portabella or button), sliced (6 cups)
1 tablespoon chopped fresh or 1 1/2 teaspoons dried dill weed
1 teaspoon salt
1/4 teaspoon pepper
8 ounces soft tofu, drained
1 cup sour cream
2 tablespoons Gold Medal™ all-purpose flour
1 tablespoon grated orange peel
6 cups hot cooked egg noodles or linguine
Chopped fresh parsley, if desired

Steps:

  • Pour boiling water over dried mushrooms in medium bowl. Let stand 30 minutes or until softened. Drain mushrooms thoroughly; reserve 3/4 cup of the mushroom liquid. Remove tough stems from mushrooms; slice mushrooms.
  • Heat oil in 4-quart Dutch oven over medium-high heat. Cook onion, garlic, shiitake and fresh mushrooms in oil about 10 minutes, stirring occasionally, until tender. Stir in dill weed, salt and pepper.
  • While mushrooms are cooking, place tofu, sour cream, reserved mushroom liquid and the flour in blender. Cover and blend on medium-high speed about 10 seconds or until smooth. Stir tofu mixture into mushroom mixture. Cook over medium heat about 2 minutes, stirring constantly, until mixture is thickened and bubbly.
  • Stir orange peel into noodles. Serve stroganoff over noodles. Sprinkle with parsley.
