1 cup fresh breadcrumb
3 tablespoons butter or 3 tablespoons margarine, melted
1/4 cup fresh parsley, chopped
1 garlic clove, minced finely
1 teaspoon lemon zest
2 tablespoons parmesan cheese, freshly grated
salt and pepper
1 lemon, juice of

Steps:

  • Thaw the mussels.
  • Drain them well, squeezing out extra liquid from the mussels.

1/4 cup dry white wine
1 hard-boiled large egg
1/2 cup olive oil
3 tablespoons white-wine vinegar

2 teaspoons drained bottled capers, rinsed, chopped if large
1 teaspoon Dijon mustard
1 teaspoon finely chopped fresh flat-leaf parsley

  • Cook mussels in wine, covered, in a 5- to 6-quart heavy pot over moderately high heat until mussels just open wide, checking frequently after 4 minutes and transferring open mussels to a shallow baking pan using a slotted spoon.
