1 28-ounce can whole tomatoes, drained and roughly chopped
1 orange
1 cup dry white vermouth or dry white wine
Large pinch saffron threads
5 pounds mussels, scrubbed and debearded
2 slightly heaping cups fresh basil, roughly chopped

Steps:

  • 1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add shallots and garlic and cook, stirring, until garlic is golden, 3 to 4 minutes. 1 small onion, finely chopped
2 garlic cloves, finely chopped
2 tablespoons unsalted butter
1/3 cup dry white wine
2 lbs mussels (preferably cultivated, scrubbed and beards removed)
1/2 cup heavy cream
1/3 cup fresh basil leaf (loosely packed)
1/4 teaspoon black pepper
1/4 teaspoon salt (Emeril's Fish Rub)

Steps:

  • Cook onion and garlic in butter in a 5- to 6-quart heavy pot over moderately low heat, stirring, until softened, 3 to 5 minutes. Add wine and mussels and cook, covered, over moderately high heat until mussels just open wide, 6 to 8 minutes. (Discard any mussels that have not opened after 8 minutes).

1 1/2 cups dry white wine
3 pounds mussels (about 100 small), scrubbed and debearded

2 tablespoons butter

3 pounds small mussels
5 cloves garlic
2 ounces fresh mint leaves
2 ounces fresh basil leaves (Asian basil, if possible)
1 4-inch-long, 1/2-inch-wide green chili, or more, to taste
3/4 ounce scallions
1 very small red bell pepper
1 tablespoon Asian fish sauce
1 tablespoon sugar
Whole black peppercorns, to taste
1 tablespoon canola oil

Steps:

  • Scrub, wash and debeard the mussels; drain well.
  • Mince garlic. Remove leaves from stems of mint and basil. Mince chili. Cut scallions into 1-inch slices and cut red pepper into julienne strips.
