My cousin makes this recipe for all family gatherings. I was craving this salad and since we are on lockdown due to the Coronavirus (and there are no family get-togethers), I decided to make a smaller batch. This was just enough for 2 servings each for hubby and myself.

5 slices bacon
1 head broccoli, cut into bite-sized pieces
½ cup raisins
¼ cup chopped green onions
3 tablespoons sunflower seeds
½ cup mayonnaise
¼ cup white sugar
3 tablespoons apple cider vinegar

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble once cool enough to handle.
  • Combine bacon, broccoli, raisins, green onions, and sunflower seeds in a large bowl.
  • Stir mayonnaise, sugar, and apple cider vinegar together. Pour over broccoli mixture and toss until well combined.

I eat this frequently for my snacks. This makes a LOT. I make it in the biggest bowl I own and store it in the fridge. That way it is always ready when I want a snack.

Number Of Ingredients 6

8 cups fresh broccoli (about 6 stalks)
5 apples (or so, use your favourite kind)
400 g trail mix (the mix of nuts and raisins)
175 g dried cranberries
350 g low-fat vanilla yogurt
1 cup mandarin orange segments (optional)

Steps:

  • Chop broccoli up. Bite sized pieces are the nicest.
  • Throw in a large bowl.
  • Cut the apples into quarters. Core them. Leave the skin on though, it adds a nice colour and texture to the salad. Cut each quarter into three wedges. Then slice them into bite sized pieces.
  • Throw them into same bowl.
  • Toss youth mix and cranberries on top.
  • Cut orange segments in half (if using).
  • Toss in the bowl.
  • Scoop vanilla yogurt on top. I use two of those little yogurt cups for the vanilla yogurt.
  • Mix well. I find that two large wooden spoons works well. IT won't look like there is enough yogurt at first -- but keep stirring.
  • This can be served right away -- but the flavours are best when it has sat in the fridge for at least an hour.
