MY FAVORITE PEANUT BUTTER COOKIE RECIPE :)

My Favorite Peanut Butter Cookie Recipe :) image

These are the only peanut butter cookies I like. They don't flatten, they're not too soft, and not too hard. They are more of a crispier/chewy cookie...they sorta melt in your mouth. Yummm. I got the recipe from a friend. Wanted to post before it gets lost.

Yield Makes about 30 cookies

Number Of Ingredients 12

1 1/4 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon fine salt
8 tablespoons (1 stick) unsalted butter, at room temperature
3/4 cup smooth peanut butter, at room temperature
1/2 cup firmly packed dark brown sugar
1/2 cup firmly packed light brown sugar
1 organic large egg, at room temperature
1 teaspoon vanilla extract
1 cup peanut butter chips
1/4 cup granulated sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Whisk together the dry ingredients in a medium bowl. In a large bowl, cream together the butter, peanut butter, and brown sugars. Stir in the egg and vanilla. Add the flour in thirds and stir until smooth. Fold in the peanut butter chips. Roll the mixture into golf ball-sized balls (about 1 1/2 tablespoons). At this point you can roll them in granulated sugar or you can press each cookie down with the tines of a fork. Either way, bake for 10 minutes, in a nonstick baking pan, rotating the pan halfway through baking time. Cool the cookies on a rack before serving.

Tips:

  • Use creamy peanut butter: This will give your cookies a smooth and creamy texture.
  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until the edges are just starting to brown: Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before storing them: This will help them keep their shape and prevent them from sticking together.
  • Store the cookies in an airtight container at room temperature for up to 3 days: You can also freeze the cookies for up to 2 months.

Conclusion:

These classic peanut butter cookies are a delicious and easy-to-make treat that are perfect for any occasion. With just a few simple ingredients, you can create a batch of cookies that are sure to be a hit with everyone. So next time you're in the mood for something sweet, give these peanut butter cookies a try!
