GRAHAM CRACKER PUDDING

Graham Cracker Pudding image

This cool and creamy no-bake dessert is so good. With all its layers, this version of an eclair cake reminded us of a graham cracker pudding lasagna. The peanut butter was an added flavor we loved and it also protected the crackers from becoming completely soft. A very thin layer of chocolate pudding on top is the perfect touch. If you need a great make-ahead dessert, give this recipe a try. It can really sit overnight to allow the graham crackers to soften. Delicious for a pot luck.

Number Of Ingredients 5

1 box(es) graham cracker
2 box(es) vanilla pudding (large, 5.1 oz each)
1 box(es) chocolate pudding (small, 3.9 oz)
1 jar(s) peanut butter
1 package(s) softened Cool Whip (8 oz)

Steps:

  • Go ahead and prepare puddings according to package instructions. Prepare vanilla pudding and set aside.
  • Prepare the chocolate pudding.
  • Next, spread peanut butter on graham crackers. Place the first layer of graham cracker/peanut butter on the bottom of 9x13 pan (peanut butter side up).
  • Then spread 1/3 of the vanilla pudding on top of that.
  • Then spread a layer of Cool Whip (works best if soft) on top of vanilla pudding.
  • Continue layering in order as above.
  • Layer until there's just enough room to spread chocolate pudding on top as a finish (use chocolate pudding to top the dessert only).
  • Crush remaining graham crackers. Sprinkle them over the chocolate pudding for garnish.
  • Refrigerate 1-2 hrs or until graham crackers are soft.
  • You can use any flavor graham cracker you wish and honestly whatever flavor pudding you wish. I have used cinnamon crackers with cream cheese pudding and it was great. Whatever you prefer.
  • You can also make your puddings from scratch with this recipe if it's what you prefer. But that requires more effort and time so this is the quick version.

Cracker Cookies - Also Known As Pms Cookies image

From the Just a Pinch Recipe Club, recipe from Kathleen Kulinkski of Sterling, VA. Just had to save this one!!!! Kathleen's Notes: This is a little bit chocolate, a little bit salt, a little bit peanut butter and then there's the fluff - everything you need to combat PMS!!

Time 40m

Yield 68 cookies, 68 serving(s)

Number Of Ingredients 5

1 lb butter flavored cracker (Ritz preferred)
4 cups peanut butter
1 (7 ounce) jar marshmallow cream
2 1/2 lbs chocolate bark (Ghirardelli preferred)
6 ounces white chocolate (optional)

Steps:

  • Spread approximately 1 tablespoon peanut butter, then a teaspoon of marshmallow cream onto a Ritz cracker and sandwich with another cracker.
  • Melt chocolate bark (I like Ghirardelli the best) on low heat in microwave, stirring often or over a double boiler.
  • Dip sandwiched cookies into chocolate, covering both sides.
  • Place cookies on waxed paper and allow to harden. I find that if you put the paper or silpat on a cookie sheet and place it in the freezer for 5 minutes, the cookies harden up faster.
  • Can be drizzled with melted white chocolate to make pretty.
  • Store in airtight container. Enjoy!

NIF'S BREAD CRACKERS IN A PINCH

Nif's Bread Crackers in a Pinch image

I was making appetizers for a work Christmas party and the idea that I had conjured up in my head was just NOT working! I looked around the kitchen and saw a loaf of bread. I needed something as a base for a couple of toppings that I wanted to use so this is what I came up with! No one could tell that they were bread shapes and they were very well received. Enjoy!

Time 27m

Yield 20 serving(s)

Number Of Ingredients 3

1 loaf bread, sliced (I used whole wheat)
1/3 cup butter
1 -2 garlic clove (depends on how garlicky you like things!)

Steps:

  • Preheat oven to 400°F Line a cookie sheet with a silicone pad, parchment paper or tin foil.
  • With a cookie cutter, cut out shapes from your slices of bread. You can use whatever shape but I used a smaller circle and they turned out great.
  • Pick up the cutouts and press them flat with your fingers, making them very thin like a cracker.
  • Crush the garlic clove(s) with the side of a large knife and add to butter. Melt in the microwave and the garlic will infuse the butter as it heats up. Brush each "cracker" with garlic butter and place on the cookie sheet.
  • Place in oven and turn over after 5 minutes. Bake for another 5 minutes. Keep an eye on them in case your oven cooks hotter than mine.
  • Top with preferred toppings.

Tips:

  • Use a sharp knife to cut the bread into thin, even slices for consistently crispy crackers.
  • Arrange the bread slices in a single layer on a baking sheet to ensure even baking.
  • Bake the crackers in a preheated oven at the recommended temperature to achieve the desired crispiness.
  • Keep an eye on the crackers while baking to prevent burning. Baking times may vary depending on the type of bread used and the desired level of crispness.
  • Allow the crackers to cool completely before storing them in an airtight container to maintain their crispiness.

Conclusion:

Homemade bread crackers are a versatile and delicious snack or accompaniment to various dishes. With just a few simple ingredients and minimal preparation, you can create your own customized crackers using a variety of bread types, seasonings, and toppings. Whether you prefer classic plain crackers, herbed crackers, or crackers with a spicy kick, the possibilities are endless. Experiment with different flavors and combinations to find your favorite bread cracker recipe that suits your taste preferences. So, next time you're craving a crunchy snack, skip the store-bought options and make your own delightful bread crackers at home using these easy-to-follow recipes.
