3 cups oatmeal
1 cup raisins (optional)
1 cup sesame seeds
1 cup sunflower seeds
1 cup pure maple syrup
1 cup crunchy peanut butter
1 teaspoon vanilla

Steps:

  • Stir dry ingredients together.
  • Melt peanut butter and maple syrup until easily mixed; add vanilla.
  • Mix with dry ingredients until well combined.
  • When cooled, roll into 1 inch balls.

This is an easy, healthy, but yummy, no-bake snack that disappears quickly whenever I take it along. You can easily substitute other ingredients for the cereal part such as ground or chopped nuts, flax seeds, etc. If you don't have enough of one thing, just add more of another.

¾ cup peanut butter
¾ cup brown sugar
¾ cup honey
1 teaspoon vanilla extract
½ cup unsweetened cocoa powder
2 cups crisp rice cereal
1 ½ cups rolled oats
1 cup coconut
¾ cup sesame seeds
¾ cup sunflower seeds

Steps:

  • In a large bowl, combine the cocoa powder, rice cereal, oats, coconut, and sesame seeds. Set aside.
  • In a saucepan over medium heat, stir together the peanut butter, brown sugar, honey, and vanilla. Cook and stir until melted and loose. Pour over the cereal mixture, and stir to coat evenly. Press lightly into a buttered 9x13 inch baking dish. Cool for about 1 hour to firm, then cut into squares.

1/4 cup butter
1/4 cup peanut butter
1/8 cup unsweetened cocoa
1/4 cup milk
1/2 tablespoon vanilla extract
1 cup granulated sugar
3 -4 original shredded wheat biscuits, smashed (About 2 cups)
24 jelly beans

Steps:

  • Combine butter, peanut butter, cocoa, milk, and vanilla in a saucepan over medium heat.
  • When the mixture has reached a soft boil, stir in sugar.
  • Stir the boiling mixture for 1 minute, to ensure sugar has dissolved.
  • Remove from heat, and stir in Shredded Wheat. Eyeball the amount, and adjust until you reach the desired consistency. In order to form the nests, it will need to be shapeable.
  • Spoon 1 tablespoon of the batter on a sheet pan lined with wax paper, shape the nests, making a hole in the center for the "eggs". Gently press the 2-3 jellybeans in the nest.
  • Refrigerate the cookies for at least 2 hours before serving. After this time they can be left in the fridge, or stored at room temperature in airtight containers.

These No-Bake Chocolate Bird's Nest Cookies are perfect for Easter! They make a great activity to put together with your kids, too!

12 ounces milk chocolate chips
12 ounces butterscotch chips*
12 ounces Chow Mein noodles
1 cup M&M's, Jellybeans, Chocolate eggs, or any other kind of "egg-shaped" candy

Steps:

  • Dump your two bags of chips into a microwave-safe bowl.
  • Melt in the microwave on 50% power for 60 seconds.Stir and repeat until all chips are smoothly melted.
  • Add bag of chow mein noodles to the melted chocolate and stir until all noodles are coated.
  • Lay out wax paper and drop a large tablespoonful of chocolate noodles onto wax paper. Mold into a "bird nest" shape. Warning- your hands will get messy.
  • Place a couple of "egg" candies on top of the chocolate nest. Let harden (if you can resist eating it! They are good when they are warm and gooey too!) and place in the fridge if you want them to set-up faster.
