1 lb lean ground beef
2 cups shredded part-skim mozzarella cheese, divided
1/2 cup low-sugar pizza sauce (I use Ragu)
diced Canadian bacon
low-fat pepperoni
turkey pepperoni (optional)
onion
green pepper
mushroom
tomatoes (optional)
your favorite pizza seasoning, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Meanwhile, brown the ground beef; drain.
  • Place meat in a mixing bowl and mix with 1 cup of mozzarella.
  • Spread the mixture into a circle on a round pizza pan or baking stone (I prefer the stone); and top with 1/2 cup pizza sauce.

1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

Steps:

  • Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
  • Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

1 3/4 teaspoons baking powder

Assorted pizza toppings such as sauce, shredded cheese, meat and vegetables, as desired

Steps:

  • Position an oven rack about 8 inches from the broiler element and preheat the broiler.

3 -4 cups lowfat mozzarella cheese
1 cup pizza sauce
Canadian bacon
pepperoni slice

Steps:

  • Preheat oven to 350.
  • Brown ground beef. Put beef in a large bowl & mix well with 2 cups of low-fat mozzarella cheese. Spread mixture out like a pizza crust on a cookie sheet or a baking stone.
  • Put 1 cup pizza sauce on the mixture. Ragu is ok.(pizza sauce, no sugar in it.) Top with 1-2 cups of low-fat shredded mozzarella. Top with canadian bacon and or low fat pepperoni slices. I usually just use the canadian bacon. Optional toppings: onions, peppers, anything legal that you like on pizza. Cook 15 minute or so (when top cheese starts to brown it is done). Put foil on rack below to catch any drippings.
