NOT FRIED, FRIED ICE CREAM
Can't remember where I found this recipe, but it's great for Mexican night, or Cinco De Mayo!! (New Note: If you use the new Special K cereal with cinnamon and pecans, this is REAL delicious! Add the sugar and not as much cinnamon, no butter, and you don't have to bake it! Very crunchy and SO DELICIOUS!!! I used about 1 1/4 C Special K.)

FRIED ICE CREAM (WITHOUT THE FRIED)
Yield 10
Number Of Ingredients 10
Steps:
- Crush cornflakes in a bag using a rolling pin until crumbs form.
- Melt butter and add cornflakes, coconut, sugar, corn syrup, and cinnamon.
- Roll ice cream into 3 inch balls. To roll the ice cream into balls, only thaw the ice cream slightly so you can easily roll it with your hands. You could even wear plastic gloves to make rolling the balls easier. Then roll the ball in the cornflake mixture. You may need to pack the mixture firmly around the ice cream ball.
- Place the covered ball onto a cookie sheet lined with waxed paper.
- Freeze until firm, about 4 hours.
- When ready to serve, top with whipped cream, hot fudge and caramel.
Tips:
- Choosing the right ice cream: Choose a firm ice cream that won't melt too quickly. Hard ice cream, such as Haagen-Dazs or Ben & Jerry's, works best.
- Cutting the ice cream: Cut the ice cream into small pieces so that it will fry evenly. You can use a knife or a cookie cutter to do this.
- Coating the ice cream: Before frying the ice cream, coat it in a mixture of flour, sugar, and cinnamon. This will help to create a crispy coating and prevent the ice cream from melting too quickly.
- Frying the ice cream: Heat a pan over medium heat and add enough oil to cover the bottom of the pan. Fry the ice cream pieces for a few minutes, or until they are golden brown and crispy.
- Serving the ice cream: Serve the fried ice cream immediately, topped with your favorite toppings. Some popular toppings include whipped cream, chocolate sauce, and fresh fruit.
