Time 40m

Number Of Ingredients 13

3 tbsp flaxseed (ground)
9 tbsp water
2 large over ripen bananas
1/2 cup coconut oil (melted)
1 tsp pure vanilla extract
2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 3/4 cups rolled oats
1/2 cup oat flour
1 cup mixed nuts & seeds (chopped, if too large)
10 Medjool pitted chopped dates or 1 cup raisins
Cooking spray (I use Misto)

Steps:

  • In a small bowl, whisk flaxseed and water. Let sit for about 10 minutes while you are getting other ingredients ready.
  • Preheat oven to 350 degrees F, line large baking sheet with unbleached parchment paper and spray with cooking spray.
  • In a large bowl, mash bananas. Add coconut oil, vanilla extract, cinnamon, baking soda and salt.
  • Add flaxseed mixture and whisk really well.
  • Add oats and oat flour; stir to combine. Add nuts and dried fruit; mix well. Dough will be very thick.
  • Using large ice cream scoop, place batter on previously prepared sheet and flatten with the back of a scoop into large size cookies. Cookies do not spread. I had about 6 cookies per sheet. Bake in batches for 20 minutes or until nuts start to brown a bit.
  • Remove from the oven and let cookies cool for a minute, then transfer onto a cooling rack to cool off completely. Enjoy for breakfast, snack or a healthy dessert!

OATMEAL COOKIES (WITHOUT THE SUGAR)

Oatmeal Cookies (Without the Sugar) image

They are not as sweet as most oatmeal cookies I've had, which is a good thing. We could not stop eating them; especially my preschooler. They are excellent "nutritional supplements!" There is no sugar in this recipe however if you prefer sugar to honey--then simply alter the recipe....cut the baking soda to 1/4 tsp. and add an extra tablespoon of water. Your baking temperature should go to 350 if you are using sugar. When replacing sugar with honey you have to increase the baking soda to increase the acid and you reduce liquid by 1 Tablespoon. Also, with honey baking--lower the baking temp.

Time 45m

Yield 30-36 cookies, 36 serving(s)

Number Of Ingredients 14

1 cup whole wheat flour (a pinch more depending on the moisture of the mix)
1 1/2 cups oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon (I actually use about 3 Tbsp(got to love cinnamon)
1/2 teaspoon nutmeg (optional)
3/4 cup honey
1/2 cup oil, you can also use some applesauce to replace some of the oil if you wish (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)
3 teaspoons vanilla
1/2 cup raisins (optional)
1/2 cup walnuts (optional)

Steps:

  • In a large bowl, mix all the dry ingredients together.
  • In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • COOL the mix for 20 minutes in the fridge.
  • Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
  • Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

SUGAR-FREE CRISPY OATMEAL COOKIES

Sugar-Free Crispy Oatmeal Cookies image

I modified this recipe and have come up with a cookie recipe that I have made once a week now for 6 months. If the cookie jar gets empty, it is a tragedy around our home. This is a very crispy cookie and reminds me of the granola bar. It's really great, give it a try. Don't deviate from the ingredients, however you may add raisins if desired.

Tips for Making the Best No-Sugar Oatmeal Cookies:

  • Use ripe bananas: The riper the bananas, the sweeter they will be, reducing the need for additional sugar. Overripe bananas will also provide a more intense banana flavor.
  • Mash the bananas thoroughly: Make sure the bananas are mashed until smooth, with no lumps. This will ensure that they are evenly distributed throughout the cookie dough and will prevent the cookies from becoming dry.
  • Use a combination of flours: Using a blend of all-purpose flour and oat flour will give the cookies a chewy texture and a slightly nutty flavor. If you don't have oat flour, you can make your own by grinding old-fashioned oats in a food processor or blender until they resemble flour.
  • Add mix-ins: Feel free to add your favorite mix-ins to the cookie dough, such as chopped nuts, dried fruit, or chocolate chips. This will add flavor and variety to the cookies.
  • Bake the cookies until they are just set: Overbaking will dry out the cookies, so be careful not to overcook them. The cookies should be slightly soft in the center when you take them out of the oven. They will continue to firm up as they cool.

Conclusion:

These no-sugar oatmeal cookies are a healthy and delicious snack that can be enjoyed by people of all ages. They are made with wholesome ingredients and are naturally sweetened with bananas and honey. With their chewy texture and slightly nutty flavor, these cookies are sure to become a favorite. So next time you're looking for a healthier cookie option, give these no-sugar oatmeal cookies a try. You won't be disappointed!
