Steps:
- Coat large saute pan with oil. Season chicken with salt and pepper. Brown chicken over medium heat, allow 7 minutes each side or until no longer pink. Sprinkle chicken with cumin, garlic powder and Mexican spices before turning. Remove chicken to a platter, allow to cool.
- Saute onion and garlic in chicken drippings until tender. Add corn and chiles. Stir well to combine. Add canned tomatoes, saute 1 minute.
- Pull chicken breasts apart by hand into shredded strips. Add shredded chicken to saute pan, combine with vegetables. Dust the mixture with flour to help set.
- Microwave tortillas on high for 30 seconds. This softens them and makes them more pliable. Coat the bottom of 2 (13 by 9-inch) pans with a ladle of enchilada sauce. Using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat. Spoon 1/4 cup chicken mixture in each tortilla. Fold over filling, place 8 enchiladas in each pan with seam side down. Top with remaining enchilada sauce and cheese.
- Bake for 15 minutes in a preheated 350 degree F oven until cheese melts. Garnish with cilantro, scallion, sour cream and chopped tomatoes before serving. Serve with Spanish rice and beans.

HEALTHIER CHICKEN ENCHILADAS I
I've always liked this recipe because it is quick and easy. I'm always looking for ways to cut out excess fat so I use reduced-fat cheese and sour cream. I also like to add fiber to make the meal a little healthier for my family so I add black beans and some bell peppers. This also adds color! To make it super healthy I use whole-wheat flour tortillas. And it still tastes just as delicious!

Tips:
- Prep your chicken: For juicy, flavorful chicken, season it generously with a blend of spices and herbs before cooking. You can use a store-bought spice mix or create your own using ingredients like chili powder, cumin, garlic powder, and paprika.
- Use a variety of vegetables: Enchiladas are a great way to sneak in extra veggies. Try using a mix of bell peppers, onions, corn, zucchini, and spinach.
- Don't be afraid to experiment with different cheeses: While cheddar is a classic enchilada cheese, you can also use Monterey Jack, pepper Jack, or queso Oaxaca. Or, try a blend of different cheeses for a more complex flavor.
- Make sure your sauce is flavorful: The sauce is what really makes enchiladas special. Use a flavorful enchilada sauce, either store-bought or homemade. If you're making your own, be sure to use fresh ingredients and simmer it for long enough to develop a rich flavor.
- Assemble your enchiladas carefully: To prevent them from falling apart, spoon the filling into the center of each tortilla and roll them up tightly. Then, place them seam-side down in a baking dish.
- Bake until bubbly and hot: Bake the enchiladas in a preheated oven until the cheese is melted and bubbly and the sauce is heated through. This usually takes about 20-25 minutes.
