NUT AND SEED BRITTLE

Provided by Ree Drummond : Food Network

Time 2h

Yield 2 bags

Number Of Ingredients 9

3/4 cup flax seeds
1/2 cup unsalted sunflower seeds
1/4 cup sesame seeds
1/2 cup slivered almonds
1 1/2 cups sugar
1/2 cup corn syrup
8 tablespoons (1 stick) salted butter
1/2 cup water
1/2 tablespoon flaked sea salt

Steps:

  • Toast the seeds and almonds in a 350 degree oven for 8 to 10 minutes, shaking the pan once during the process.
  • Line a baking sheet with parchment.
  • Heat the sugar, corn syrup, butter and water in a large saucepan over medium-high heat. Stir gently with a wooden spoon until the sugar has melted. Stop stirring and allow the sugar to cook until it reaches 300 degrees F on a candy thermometer -- swirl the pan occasionally to ensure it cooks evenly, about 10 minutes.
  • Carefully, but moving quickly, stir in the toasted seeds and nuts until everything is coated. Pour onto the prepared baking sheet, trying to disperse it as evenly as possible and using the back of a spoon as needed. Sprinkle over the sea salt and allow to cool completely, 1 1/2 hours.
  • Break the brittle into shards of desired size and store in an airtight container or pack into clear bags and tie with ribbon.

Yield Makes about 3 cups

Number Of Ingredients 7

1 cup sugar
1 1/2 teaspoons salt
1 tablespoon English-style dry mustard
1 cup tarragon vinegar
1 cup vegetable oil
1/4 cup minced onion
1 papaya, halved, reserving 3 tablespoons of the seeds and reserving the fruit for another use

Steps:

  • In a blender or food processor blend the sugar, the salt, the mustard, and the vinegar until the mixture is smooth. With the motor running add the oil in a stream and blend the dressing until it is emulsified. Add the onion and the reserved papaya seeds and blend the dressing until the papaya seeds are the consistency of ground pepper. The dressing keeps, covered and chilled, for 2 weeks.

Tips:

  • Choose high-quality ingredients: Use fresh, ripe papaya and raw, unsalted nuts and seeds for the best flavor and texture.
  • Experiment with different nut and seed combinations: There are endless possibilities, so feel free to mix and match your favorites. Some popular choices include almonds, cashews, walnuts, pecans, pistachios, sunflower seeds, and pumpkin seeds.
  • Toast the nuts and seeds for extra flavor: Toasting brings out the natural oils and flavors of the nuts and seeds. You can toast them in a single layer on a baking sheet in a preheated oven at 350°F for 10-12 minutes, or in a skillet over medium heat for 5-7 minutes, stirring frequently.
  • Add dried fruit for natural sweetness: Dried papaya, raisins, cranberries, and apricots are all great additions to nut and seed mixes. Just be sure to add them after the nuts and seeds have cooled, so they don't get too soft.
  • Season the mix to taste: You can add a variety of seasonings to your nut and seed mix, such as salt, pepper, garlic powder, onion powder, or chili powder. Just start with a small amount and adjust to taste.
  • Store the mix in an airtight container: Nut and seed mixes can be stored in an airtight container at room temperature for up to 2 weeks. You can also store them in the refrigerator for up to 3 months, or in the freezer for up to 6 months.

Conclusion:

Nut and seed mixes are a healthy, portable snack that can be enjoyed on their own or added to trail mix, yogurt, oatmeal, or salads. They're also a great gift for friends and family. So next time you're looking for a healthy snack, give this nut and seed mix with papaya a try.
