1/3 cup water
4 cups mixed nuts

Steps:

  • In a large heavy saucepan, combine the sugar, corn syrup and water. Cover and bring to a boil over medium heat. Uncover and cook until a candy thermometer reads 290° (soft-crack stage)., Meanwhile, grease a 15x10x1-in. baking pan with 2 teaspoons butter; set aside. Place nuts in two ungreased 15x10x1-in. baking pans; bake at 325° for 10-15 minutes or until warm. (Keep warm until ready to use.), Remove sugar mixture from the heat; carefully stir in the nuts, vanilla, salt and remaining butter. Quickly spread into prepared pan. 1 cup salted dry roasted peanuts
1 cup shelled pistachios
1 cup pecan halves
1 cup sugar
1 cup unsalted butter (2 sticks), cut into chunks
1/3 cup light corn syrup
2 teaspoons honey

Steps:

  • Put the nuts, sugar, butter, corn syrup, and honey in a saucepan over medium-high heat. Stir constantly with a wooden spoon until it becomes a nice walnut color and thickens, about 10 to 12 minutes. Quickly pour onto a silpat or foil lined baking sheet and spread the brittle to an even thickness of about 1/3-inch with the back of the spoon.
  • Cool for 3 or 4 minutes then score the brittle with a sharp knife into about 24 (2-inch) squares. Once the brittle has cooled completely, snap along scored marks.

1/4 cup sesame seeds
1/2 cup slivered almonds
1 1/2 cups sugar
1/2 cup corn syrup
8 tablespoons (1 stick) salted butter
1/2 cup water
1/2 tablespoon flaked sea salt

Steps:

  • Toast the seeds and almonds in a 350 degree oven for 8 to 10 minutes, shaking the pan once during the process.
  • Line a baking sheet with parchment.
  • Heat the sugar, corn syrup, butter and water in a large saucepan over medium-high heat. Stir gently with a wooden spoon until the sugar has melted. Stop stirring and allow the sugar to cook until it reaches 300 degrees F on a candy thermometer -- swirl the pan occasionally to ensure it cooks evenly, about 10 minutes.
  • Carefully, but moving quickly, stir in the toasted seeds and nuts until everything is coated. Pour onto the prepared baking sheet, trying to disperse it as evenly as possible and using the back of a spoon as needed. Sprinkle over the sea salt and allow to cool completely, 1 1/2 hours.
  • Break the brittle into shards of desired size and store in an airtight container or pack into clear bags and tie with ribbon.

1 cup sugar
3 tablespoons water

  • Line a 15x10x1-inch baking pan with Reynolds Wrap® Non-Stick Foil; set aside.
  • Melt the butter in a 2-quart heavy saucepan over medium heat. Stir in sugar, water and corn syrup. Bring to boiling over medium-high heat, stirring until sugar is dissolved. Avoid splashing side of saucepan. Clip a candy thermometer to side of pan. Cook over medium heat, stirring frequently, until thermometer registers 290 degrees F or a small amount of mixture dropped into very cold water separates into threads that are hard but not brittle. This will take about 18 minutes. Adjust heat as necessary to maintain a steady boil. Watch carefully the last 5 minutes to prevent overcooking. Remove from heat and remove the thermometer.

1 cup almonds, divided
2 cups packed brown sugar
1 cup maple syrup
½ cup cold butter
1 cup chocolate chips

Steps:

  • Line a baking sheet with aluminum foil; spray lightly with cooking spray. Reserve 2 tablespoons of almonds and sprinkle the rest evenly over the foil.
  • Combine brown sugar and maple syrup in a 2-quart saucepan over medium heat. Cook and stir until sugar is dissolved and caramel mixture comes to a full boil, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn oven off once preheated; place prepared baking sheet in the oven to warm.

1 1/4 cups granulated sugar
1/3 cup light corn syrup

  • Preheat the oven to 350 degrees F. Spread the nuts on a baking tray and toast for 8 to 10 minutes, turning the nuts after 5 minutes. Cool and then coarsely chop. Set aside.
  • Place the sugar in a medium deep saucepan. Add the corn syrup and water, and over medium heat, bring to a boil. Boil until a layer of bubbles forms on top, 3 to 4 minutes. Cover the pan with aluminum foil and continue to boil 5 minutes longer.
  • Remove the foil, add the butter, and stir with a wooden spoon until the butter is melted. Cook over medium heat until a candy thermometer registers 300 degrees F, about 30 minutes, stirring occasionally. Immediately stir in the salt, baking soda, and reserved nuts.
  • Meanwhile, coat with vegetable oil or spray a 12 by 17-inch half sheet pan. Spread the nut mixture over the prepared pan, spreading it as thin as possible with a long, metal spatula. When cool, run a clean, dry towel over the top to absorb some of the oil.
  • Cut or break the brittle into desired pieces.

3 tablespoons unsalted butter, room temperature, plus more for baking sheet
1 cup coarsely chopped macadamia nuts (about 4 1/2 ounces)
1 1/2 cups sugar
1/2 cup light corn syrup
1/2 cup water
1/2 cup finely chopped semisweet chocolate (about 2 1/4 ounces)
Vegetable oil, for spatula

Steps:

  • Brush a 9-by-13-inch rimmed baking sheet with butter. Sprinkle the chopped nuts over the baking sheet; set aside.
  • Combine the sugar, corn syrup, water, and butter in a medium saucepan. Cook over medium heat, stirring occasionally until the sugar has dissolved. Using a pastry brush dipped in water, brush away any sugar crystals on the side of the pan to prevent recrystallization. Mixed nut, coffee flavored brittle. I got a Kahlua Recipe Booklet with a purchase of Kahlua over 15 years ago. I give this as a gift to friends at Christmas. This is not a recipe to make around small children (candy is boiling hot) and you must follow the directions exactly. Be prepared to spend time stirring the candy to hard crack stage. (20-30 minutes non-stop)

3 cups whole mixed nuts (cashews, almonds, walnuts, pecans and macadamias)
3/4 cup granulated sugar
1/2 cup Kahlua
1 tablespoon corn syrup
2 teaspoons butter

Steps:

  • Heat oven 275 degrees, place nuts in shallow pan and heat 20 minutes, mixing after 10. (If using macadamia nuts and walnuts add them only for the last 10 minutes they are oily and can burn).
  • In a large saucepan (you will be mixing the nuts in this at the end) combine sugar, Kahlua, corn syrup and butter using a wooden spoon stirring constantly and scraping sides to get all sugar crystals melted. Sugar mixture will need to boil at least 15 minutes before you need to insert candy thermometer, keep stirring until (300 degrees F- hard-crack stage) It is very important to get all the way to 300 or the candy will be gritty and soft.
  • Take off heat, pour in nuts, stirring quickly then pour mixture out onto large cookie sheet lightly sprayed with 'pam'. Scraping all candy out and gently spreading out candy with wooden spoon. Let cool until you can handle and break into smaller chunks. Store in airtight tin.

2 cups sugar

  • Chop the nuts or seeds if they are large; otherwise, leave them whole. Put them into a 4-quart glass bowl with all other ingredients except the baking soda and vanilla extract. Stir in 3/4 cup water. Heat in a microwave oven on high power for 5 minutes. Using oven mitts or potholders, carefully transfer the bowl to a countertop and stir with a heat-resistant spatula. 1 1/2 cups sugar
1 cup water
1 cup light corn syrup
1 (12 ounce) can premium mixed nuts
3 tablespoons butter
1 teaspoon vanilla
1 1/2 teaspoons baking soda

Steps:

  • Generously butter a cookie sheet.
  • In a large saucepan over high heat, cook sugar, water, and corn syrup until mixture reaches 280 degrees on a candy thermometer.
  • Slowly add nuts and cook, stirring, until temperature reaches 300 degrees; turn off heat.

This recipe has the goodness of brazil nuts white and dark chocolate and fudge...So yummy and delicious. You can buy the fudge in the grocery store...

oil for brushing
1 pkg semi-sweet chocolate chips (12 oz)
3/4 c shelled brazil nuts, chopped
6 oz white chocolate chips, do not melt
6 oz fudge, coarsley chopped, do not melt

  • 1. Brush the bottom of an 8 inch square cake pan with oil and line with parchment paper. Melt half the chocolate chips and spread in the prepared pan.
  • 2. Sprinkle with the chopped brazil nuts, white chocolate and fudge. Melt the remaining semisweet chocolate pieces and pour over the top.
