Time 20m

Yield 6 to 8 sandwiches

Number Of Ingredients 13

1/2 cup almond butter
1/2 teaspoon almond extract
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking soda
1/2 teaspoon fine salt
1/4 teaspoon ground cinnamon
1 cup buttermilk, at room temperature
1 large egg, at room temperature
1 teaspoon pure vanilla extract
Vegetable oil cooking spray
2 tablespoons cherry preserves
Confectioners' sugar, for dusting

Steps:

  • Stir the almond butter and almond extract together in a small bowl. Put a baking sheet and a piece of foil next to the stove.
  • Heat a griddle or a large nonstick skillet over medium-high heat. Whisk together the flour, sugar, baking soda, salt, cinnamon, buttermilk, egg and vanilla extract in a large bowl until smooth.
  • Spray the griddle lightly with cooking spray. Working in batches, use a small scoop or ladle to drop 2 tablespoons of batter per pancake onto the griddle, being careful not to crowd the pan. Cook the pancakes until they are golden brown on each side, 1 to 2 minutes per side. Transfer each batch to the baking sheet and tent with foil while you cook the remaining batter.
  • To serve, spread 1 tablespoon of the almond butter mixture on half of the pancakes. Spoon 1 teaspoon of the cherry preserves onto the remaining pancakes and flip them onto the pancakes with almond butter to make sandwiches. Dust the sandwiches with confectioners' sugar, and serve.

DAIRY-FREE SILVER DOLLAR PANCAKE

Dairy-Free Silver Dollar Pancake image

If you are looking for a recipe to satisfy hunger and a sweet tooth, look no further than here. This is a low-calorie silver dollar pancake. Delicious with fresh fruit for a nutritious treat. I used soy milk because it's thicker than skim with the same amount of calories.

Time 10m

Yield 1

Number Of Ingredients 6

¼ cup all-purpose flour
¼ cup soy milk
1 egg white
2 packets sugar substitute (such as Equal®)
1 teaspoon baking soda
cooking spray

Steps:

  • Mix flour, soy milk, egg white, and sweetener together. Add baking soda and stir batter to combine.
  • Mist a skillet with cooking spray and heat over medium heat. Pour batter into the skillet and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, about 2 minutes more.

Nutrition Facts : Calories 172.6 calories, Carbohydrate 27.9 g, Fat 1.6 g, Fiber 1.2 g, Protein 10.8 g, SaturatedFat 0.2 g, Sodium 1346.2 mg, Sugar 2.7 g

Tips:

  • Use a variety of flours: This recipe uses a blend of whole wheat flour, white whole wheat flour, and oat flour, but you can use any combination of whole grain flours you like. Just be sure to use at least 1/2 cup of whole grain flour for the best flavor and texture.
  • Grind your own oats: If you don't have oat flour on hand, you can easily make your own by grinding oats in a blender or food processor until they are finely ground.
  • Use fresh buttermilk: Buttermilk gives these pancakes a tangy flavor and helps them to rise. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
  • Don't overmix the batter: Overmixing the batter will make the pancakes tough. Just stir until the ingredients are combined.
  • Cook the pancakes over medium heat: Cooking the pancakes over medium heat will prevent them from burning. Be patient and let them cook through before flipping them.

Conclusion:

These nutty whole grain silver dollar pancakes are a delicious and healthy way to start your day. They are packed with fiber and protein, and they have a slightly sweet flavor that is perfect with maple syrup or fresh fruit. Plus, they are so easy to make that you can have them on the table in no time. So next time you are looking for a quick and easy breakfast, give these pancakes a try!
