OAT PANCAKE/ WAFFLE BATTER

Oat Pancake/ Waffle Batter image

This is a variation from a Bob's Red Mill recipe. Very hearty and healthy. I like serving these with berry sauce instead of maple syrup. My small children (under 3 years) also enjoy eating the pancakes cold as a snack.

Time 15m

Yield 12-15 Pancakes, 5 serving(s)

Number Of Ingredients 10

1 1/4 cups whole wheat flour
3/4 cup whole oats
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2-2 cups buttermilk
2 eggs, beaten
1/4 cup butter, melted
1 egg (total of 3)
1 tablespoon oil

Steps:

  • Put whole oats through blender, food processor, or grain mill to make a course meal.
  • Mix all dry ingredients.
  • Stir in the buttermilk, eggs, (oil if making waffles) and butter until well blended.
  • Make pancakes or waffles immediately or store in fridge/freezer.

Tips:

1. **Use ripe bananas**: Overripe bananas add natural sweetness and moisture to the waffles, reducing the need for added sugar. 2. **Choose the right oats**: Old-fashioned rolled oats are best for this recipe. Quick oats or steel-cut oats will not work as well. 3. **Grind the oats**: Grinding the oats into a flour helps create a smooth and fluffy waffle batter. 4. **Don't overmix the batter**: Overmixing the batter can result in tough waffles. Mix just until the ingredients are combined. 5. **Let the batter rest**: Allowing the batter to rest for a few minutes before cooking helps the oats absorb the liquid and results in a better texture. 6. **Use a hot waffle iron**: A hot waffle iron is essential for crispy waffles. Preheat the waffle iron according to the manufacturer's instructions. 7. **Cook the waffles until golden brown**: Cook the waffles until they are golden brown and crispy on the outside. This ensures that they are cooked through and have a delicious flavor.

Conclusion:

These oat waffles are a delicious and healthy breakfast option that can be enjoyed by people of all ages. They are easy to make and can be customized with a variety of toppings, such as fresh fruit, nuts, and syrup. Whether you are looking for a quick weekday breakfast or a special weekend brunch, these oat waffles are a great choice. They are sure to become a family favorite!
