3/4 cup all-purpose flour
3/4 cup old-fashioned rolled oats
1/4 cup firmly packed dark brown sugar
1 1/2 teaspoons double-acting baking powder

1/8 teaspoon cinnamon
1/3 cup chopped pitted dried dates
1/3 cup walnuts, toasted lightly and chopped fine
1/2 cup plain yogurt
1/4 cup milk
2 tablespoons unsalted butter, melted and cooled
1 large egg, beaten lightly

Steps:

2 cups low-fat buttermilk
1 2/3 cups whole wheat flour
3/4 cup packed brown sugar
2 tablespoons canola oil
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs, lightly beaten
2/3 cup chopped dates

Steps:

  • Combine oats and buttermilk and refrigerate for 8 hours.
  • Preheat oven to 350.
  • Combine flour, buttermilk mixture, brown sugar, canola oil, baking powder, baking soda, salt and eggs in large bowl.
