Time 27m

Yield 36 cookies, 18 serving(s)

Number Of Ingredients 11

1 1/4 cups quick oats
1 cup all-purpose flour
1/4 cup wheat germ
3/4 cup light brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup corn oil
1 egg
1 teaspoon vanilla
1/2 cup raisins
1/2 cup unsalted sunflower seeds

Steps:

  • Preheat oven to 325°F Mix all ingredients together in mixing bowl. Form into 1" balls and place on ungreased cookie sheet. Bake for 12 to 15 minutes.
  • If you find them hard to form into the 1" balls, add a tiny bit of water to the recipe to make it less crumbly.

Tips:

  • Use old-fashioned oats. They provide a chewier texture than quick or instant oats.
  • Toast the sunflower seeds. This enhances their flavor and makes them more crunchy.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough before baking. This helps the cookies hold their shape.
  • Bake the cookies until they are golden brown. Overbaking will make them dry and crumbly.

Conclusion:

These oatmeal sunflower seed cookies are a delicious and healthy snack or breakfast option. They are packed with fiber, protein, and healthy fats, and they are also naturally gluten-free. Whether you are looking for a quick and easy recipe or a healthier alternative to traditional cookies, these oatmeal sunflower seed cookies are sure to please.
