Steps:

1/2 cup wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1/3 cup honey
2 large eggs
1 tablespoon vanilla
3 cups quick oats
1 cup raisins (OPTIONAL -- Soak raisins in ater the night before to make them plump)
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, line pans with oven safe wax paper or foil.
  • In 1 bowl, mix Flour, Baking Soda, Baking Powder, Cinnamon, and Salt.
  • In another bowl, beat together the Butter, and Sugars until fluffy. {won't look entirly smooth} Then, beat in Honey, Eggs, and Vanilla.

1 1/2 cups all-purpose flour (can use part or all whole-wheat)
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 cup margarine (now I use coconut oil) or 1 cup Crisco, softened (now I use coconut oil)
1/2 cup light brown sugar, firmly packed
1/2-1 cup granulated sugar (depending on how sweet you would like them)
1 large egg
1 1/2 teaspoons vanilla extract
1 cup ground walnuts (can grind in blender)
1 cup old fashioned oats
1 cup semi-sweet chocolate chips
1 cup raisins

Steps:

  • In a small bowl mix flour, baking soda and cinnamon.
  • In a large mixing bowl beat butter and sugars until light and fluffy. Beat in egg and vanilla.
  • At a low speed, beat in flour mixture until blended.
  • Stir in ground walnuts, oats, chocolate chips and raisins.
  • Cover with plastic wrap and chill for 1 hour.
  • Preheat oven to 350.
  • Grease 2 baking sheets.
  • Shape dough into 1-inch balls. Place balls 2 inches apart on prepared baking sheets. Flatten each cookie slightly (The bottom of a mug works).

2 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixer bowl, combine the white sugar, brown sugar and shortening. Beat until smooth and creamy. Add the eggs one at a time mixing well after each one. Beat mixture until well combined.
  • Mix in the milk, baking soda, baking powder, salt, cinnamon and vanilla to the egg mixture. Beat for one minute. Add the flour and mix until incorporated. Add the walnuts and mix again. Add the oats one cup at a time, mixing well after each addition. Stir in the dried tart cherries and mix just until they are distributed evenly.
  • Drop heaping tablespoonfuls of batter about 2 inches apart on ungreased cookie sheets. Do not shape them, they will spread evenly during the baking process. Bake at 350 degrees F (175 degrees C) for 12 to 13 minutes. The tops of the cookies should just turn a light golden brown. Remove the cookies from the oven and let sit on the sheets for about 5 minutes before moving the cookies to cooling racks. Let cookies cool to room temperature than place in airtight containers for storage.

3 tablespoons pure maple syrup
2 tablespoons golden syrup

2 3/4 ounces (1 cup) walnuts, coarsely chopped

Steps:

  • Preheat oven to 300 degrees. Have ready 2 baking sheets lined with parchment. In a medium bowl, whisk the oatmeal, coconut, flour, salt, and sugar. Set aside.
  • In a small saucepan over medium heat, combine the butter, maple syrup, and golden syrup. Heat until the butter is melted. Remove from heat, and set aside. In a small bowl, combine the baking soda with the boiling water. Immediately stir this mixture into the melted butter until combined. Add the maple extract; stir into the oat mixture.   • 1. Preheat oven to 350 degrees. Spray a cookie sheet with cooking spray, set aside.
  • 2. In mixing bowl, cream together butter and sugars. Add eggs and beat until light and fluffy. Add flavorings and mix well.
  • 3. Whisk together flour, baking soda, salt, and cinnamon until well mixed. Add to creamed mixture a little at a time and beat on low speed until smooth. Mix in oatmeal by hand. When thoroughly mixed, fold in nuts.
  • 4. Drop by heaping tablespoons onto prepared cookie sheet approximately 2" apart. Bake for 7 to 8 minutes or until cookies are lightly browned. 3/4 c firmly packed brown sugar
1/2 c granulated sugar
2 eggs
1 tsp vanilla flavor
1 1/2 c all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt (optional)
3 c quaker oats (quick) old fasion or uncooked
1 c raisins
1/2 c black walnuts
1/4 c applesauce (unsweetened)

Steps:

  • 1. 1.HEAT OVEN TO 350o F. IN A LARGE BOWL, BEAT CRISCO, AND SUGARS ON MEDIUM SPEED WITH AN ELECTRIC MIXER UNTIL CREAMY. 2. ADD EGGS AND VANILLA; BEAT WELL.
  • 2. 3. ADD COMBINED FLOUR, BAKING SODA,CINNAMON AND SALT. MIX WELL. 4. ADD OATS , APPLESAUCE, RAISINS AND BLACK WALNUTS. MIX WELL 5. DROP DOUGH BY ROUNDED SPOONFULS INTO THE PALM OF YOUR HAND. ROLL INTO BALL. PLACE ON UNGREASED COOKIE SHEET. DO NOT PRESS.

These are such unique cookies! These cookies become very thin when they cook, and the addition of brown rice syrup (better for you then sugar... has complex carbs to keep you fuller longer) makes the cookie very chewy and almost slightly sticky. You have never tasted anything like it!

1/3 cup margarine
1 tablespoon smooth applesauce
2/3 cup brown rice syrup
2 egg whites
1/2 cup firmly packed brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats, quick cooking
3 -4 tablespoons chopped walnuts or 3 -4 tablespoons miniature chocolate chips
3 -3 1/2 tablespoons craisins (or raisins)

Steps:

  • In a dry saucepan on medium, toast the walnuts (if using) and oats together until browned and fragrant, stirring occasionally. Set aside.
  • In a large bowl, beat margarine(at room temp) and applesauce with brown sugar until light and fluffy (with electric beaters).
  • add egg whites, brown rice syrup, and vanilla and beat until smooth, about a minute.
  • In a smaller bowl, combine flours, cinnamon, baking soda, and salt.
  • Mix into creamed mixture. Stir in oats, walnuts (or chocolate chips), and craisins.
  • Chill dough for 30 minutes.
  • Drop dough on parchment paper-covered cookie sheet (dont flatten tops).
  • Bake at 330° F 12-15 minutes or until spread out and very lightly browned. They will be flat and the tops will have small bubble pockets, and though they may look soft and not done, they are! Allow cookies to cool slightly then place cookies on cooling rack. Use a very good spatchula or else they will be tricky to get off the pan without breaking!
  • Cookies will be quite delicate and slightly sticky (especially when hot), so when you store them, be sure their edges arn't touching eachother and use wax paper to line between the layers. ENJOY!

This is a variation of a cookie recipe I love, just to give credit where credit is due... The Kind Diet's Oatmeal, Walnut and Dried Plum cookies. They are delicious but a lot of sugar so I tried another version and I think they are just as yummy!

1 cup whole wheat flour
1 cup rolled oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 cup raw sugar
1/3 cup chopped walnuts
1/3 cup chopped dates
1/4 cup plain soymilk
1/4 cup canola oil
4 ounces natural applesauce, single serving cup
2 teaspoons molasses
2 tablespoons maple syrup

Steps:

  • Preheat oven to 350 degrees F. (or 325 convection oven). Line 3 cookies sheets with parchment paper.
  • Mix all dry ingredients.
  • Wisk together wet ingredients.
  • Fold in dry to wet and stir until moist. If batter is too dry add a little more applesauce.
  • Use small ice cream scoop to make cookies.
  • Bake 15 minutes.
  • Transfer to baking rack and cool.
  • I throw them into a ziploc bag and just grab 2 out of the freezer whenever the mood hits me. I use them for the kids lunches too and they love them!
  • VARIATION: I basically make the same recipe but with dairy free chocolate chips instead of walnuts and omit molasses and maple syrup. We live on those! I love stocking up the freezer on Sundays. :).

1 1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 C. Butter
1/2 C. Maple sugar
1/2 C. Maple syrup
2 Eggs
1 C. Quick oats
1/2 C. Chocolate chips
1/2 C. Walnuts, chopped

Steps:

  • Preheat oven to 375 degrees Fahrenheit Line a large cookie sheet with parchment paper Blend flour, b. powder and b. soda together in a small bowl. Set aside Combine butter, maple syrup and maple sugar and beat with an electric mixer on medium speed until creamed together Add eggs to butter/sugar mixture and beat until smooth and creamy Combine oats, chopped walnuts and chocolate chips together and add to wet ingredients and mix all ingredients well Stir in dry ingredients and coat flour with all ingredients to make a dough that comes away from the sides of the bowl Roll small amounts of dough into a ball placing 2 inches apart on parchment paper Bake in preheated oven for 10 minutes until lightly browned Remove from oven and place on wire rack to cool completely before storing away in a container
