DELMARVA SEASONING (OLD BAY SUBSTITUTE)

Delmarva Seasoning (Old Bay Substitute) image

As all you crab afficionados know, the term "Delmarva" refers to the coastal areas bordering on the states of Delaware (Del), Maryland (mar)and Virginia (va) where the world's best crabmeat is harvested. Thing is that a lot of people go to a lot of trouble (and a lot of expense) to buy the best lump crabmeat available -- but then they use a mass-produced commercial product to season it. Weird! This recipe for 'homemade' seasoning is courtesy of Epicurious. All you Old Bay die-hards, I defy you to try it and tell me you can't taste a difference!! :)

CREOLE SEASONING (OLD BAY)

Creole Seasoning (Old Bay) image

The original seasoning was invented in the 1940's by an American-German immigrant named Gustav Brunn. Initially, it was intended only for use on crab meat (as there was plenty of it in the Chesapeake Bay area where Gustav lived!), but in the last decade or so, it's used in other food areas, such as poultry and salads.

Categories     Seafood

Time 10m

Number Of Ingredients 12

4 tsp kosher salt
1 Tbsp ground celery seed or celery powder
2 tsp dry mustard
2 tsp cayenne pepper
2 tsp black pepper
2 tsp ground bay leaf
2 tsp paprika, smoked
1/2 tsp ground caramom
1/2 tsp ground ginger
1/8 tsp ground nutmeg
1/8 tsp allspice
1/8 tsp ground cinnamon

Steps:

  • 1. Blend ingredients in a blender or spice grinder to a medium grind consistency. Combine all ingredients in an airtight container and shake well. Store in a cool, dry place.
  • 2. I save the empty large spice containers and reuse them for my spice blends.
  • 3. I've reduced the amount of salt and I use celery powder instead of celery seed. I also use cayenne pepper instead of red pepper flakes. If you are watching your salt intake, just omit the salt all together and or use a salt substitute.

Tips:

  • Use Old Bay Seasoning Generously: Don't be shy with the Old Bay seasoning. Its unique blend of spices and herbs is meant to be savored, so don't hold back when adding it to your dishes.
  • Experiment with Different Recipes: The versatility of Old Bay seasoning makes it a great addition to a wide variety of dishes, from classic seafood boils to grilled meats and even baked goods. Don't be afraid to try it in new and unexpected ways.
  • Adjust the Heat Level: Old Bay seasoning has a mild to medium heat level, but you can easily adjust it to your preference. Add more cayenne pepper or red pepper flakes for a spicier kick, or reduce the amount for a milder flavor.
  • Use Fresh Herbs and Spices: While Old Bay seasoning is a great all-in-one solution, don't be afraid to add fresh herbs and spices to your dishes for an extra layer of flavor. Some common pairings include parsley, thyme, paprika, and garlic powder.
  • Store Old Bay Seasoning Properly: To maintain its freshness and flavor, store Old Bay seasoning in a cool, dry place away from direct sunlight. A tightly sealed container will help preserve its quality for up to two years.

Conclusion:

Old Bay seasoning is a versatile and flavorful blend that can elevate the taste of a wide variety of dishes. Its unique combination of spices and herbs makes it a staple in many kitchens, and its popularity continues to grow among home cooks and professional chefs alike. Whether you're using it in a classic seafood boil, a grilled chicken marinade, or a homemade potato chip recipe, Old Bay seasoning is sure to add a delicious and memorable touch to your culinary creations.
