- Form the ground beef into four 8-ounce patties. A quick and easy way to do this is to divide the meat into 4 piles. Place a pile on the top of a deli container lid. Take a second deli container lid and place the top of it against the meat. Press down evenly and firmly and watch as a perfect patty forms. Repeat with the remaining meat. Make an indentation in the middle of each patty with your thumb to keep the burger from shrinking as it cooks.
- Sprinkle each patty on both sides with 3/4 teaspoon salt and 1/4 teaspoon pepper. Lightly brush the grill grates with oil. Grill the patties, indentation-side up, until marked on the bottom, about 4 minutes. Flip and cook until marked and slightly firm, about 4 more minutes for medium-rare. For cheeseburgers, top with 1 slice cheese during the last minute of cooking if desired; cover the grill to melt. Remove to a plate and let rest for 5 minutes.
- While the burgers cook, place the onion slices on the grill (try to keep them together in a disk). - If you have a big mixer, such as a KitchenAid, toss in the ground beef, onion, and other ingredients. (Be sure to set on a low setting to start due to the liquid ingredients. If you don't have a mixer, prepare to get your hands dirty.)
- Mix all the ingredients until blended. Stir midway through with a spoon/fork to ensure that it has reached the bottom completely.
- Take about 1/4lb of mixture to make patty and roll in the palm of your hand pressing gently to form the patty. The thicker the patty, the longer cooking time. (I usually press it to right around the size of my hand.) Don't forget, the patties will shrink up as they are cooked, so don't make them too small. Place each on waxed paper-lined cookie sheet. Place the cookie sheet of patties in your freezer just until they are firmed up. (You don't want them frozen, only firm enough to through on the grill without them falling apart.)
- Place on medium heat grill and cook until your desired doneness. Medium well is usually about 8-10 min depending on the thickness of burgers.
- Remove from grill. Fix up your buns with preferred garnishes. Remember, you have lots of flavoring in the burger already, so you may not need as many condiments as you normally would. Enjoy!
