1 yellow pepper, sliced
1 small red onion, sliced
2 boneless, skinless chicken breasts
3 carrots, sliced on the bias
1 cup broccoli floret
1 cup snow pea
1 can black beans, drained, rinsed
4 cups brown rice, cooked
½ cup olive oil
½ cup lime juice
½ cup honey
1 tablespoon garlic, chopped
1 teaspoon chipotle powder
1 teaspoon cumin
salt, to taste
pepper, to taste
1 cup soy sauce
½ cup honey
1 tablespoon fresh ginger, minced
1 tablespoon fresh garlic, minced
1 tablespoon sesame oil

Steps:

  • Preheat oven to 425˚F/220˚C.
  • Spray a parchment paper-lined baking sheet with cooking spray. Place the red pepper, yellow pepper, and red onion on the left half of the sheet and the carrots, broccoli, and snow peas on the right half. Set aside.
  • Mix all the ingredients for teriyaki sauce together.
  • Pour teriyaki sauce into container and seal.
