ONION, RAISIN, AND GARLIC COMPOTE

Categories     Condiment/Spread     Sauce     Garlic     Onion     Sauté     Raisin     Bon Appétit

Yield Makes about 2 cups

Number Of Ingredients 10

1 pound pearl onions
1/4 cup (1/2 stick) butter
24 garlic cloves, peeled
1 bay leaf
1 1/2 cups tawny Port
1/4 cup white wine vinegar
4 teaspoons sugar
1/2 teaspoon salt
1/2 cup raisins
1 1/2 teaspoons chopped fresh thyme

Steps:

  • Bring large saucepan of water to boil. Add onions. Boil 2 minutes. Drain. Rinse under cold water. Peel onions. Trim root end slightly, leaving root base intact.
  • Melt butter in heavy medium saucepan over medium-low heat. Add garlic and bay leaf. Sauté until garlic is golden brown, about 6 minutes. Add Port, vinegar, sugar, and salt. Simmer 8 minutes. Add onions and raisins. Simmer until onions are tender, stirring occasionally, about 9 minutes. Remove from heat. Stir in thyme. Discard bay leaf. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Rewarm over medium heat before serving.) Serve warm.

Tips:

  • Use a variety of onions for a more complex flavor. Try using red onions, yellow onions, and shallots.
  • Soak the raisins in hot water for 10 minutes before using them. This will help to plump them up and make them more flavorful.
  • Use a good quality balsamic vinegar. A cheap balsamic vinegar will have a harsh flavor that will overpower the other ingredients in the compote.
  • Don't overcook the compote. The onions should be soft but still have a little bit of bite to them.
  • Serve the compote warm or at room temperature. It can be served on its own as a side dish, or it can be used as a condiment for meats, poultry, or fish.

Conclusion:

Onion, raisin, and garlic compote is a delicious and versatile dish that can be enjoyed in many different ways. It is easy to make and can be tailored to your own personal taste. Whether you serve it as a side dish, a condiment, or even a spread, this compote is sure to be a hit. So next time you are looking for a new and exciting way to enjoy onions, give this recipe a try. You won't be disappointed!
