1/4 cup mayonnaise, plus more for spreading
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
4 slices sandwich bread
Sliced ham, lettuce, sliced olives, peas, bell pepper, cherry tomatoes, pickles, and grated carrot, for toppings

Steps:

  • Make egg salad: In a medium saucepan, cover eggs with water. Bring to a boil; cook, uncovered, 2 minutes. Cover pan, and remove from heat; let stand 10 minutes. Hold eggs under cold running water to stop the cooking. Peel eggs.
  • Slice 2 eggs with a knife or an egg slicer. Set aside eight of the slices for eyes, and place remaining pieces in a bowl. Add unsliced eggs to bowl, and mash with a fork. Add mayonnaise, mustard, salt, and pepper; stir to combine.
  • Spread a thin layer of mayonnaise over each slice of bread. Cover bread with egg salad, or layer on sliced ham. Make faces using the egg-yolk slices, egg salad, and the remaining toppings, as desired. Serve immediately.

1 1/2 pounds red-skinned potatoes, pierced with a fork
4 tablespoons unsalted butter
3/4 to 1 cup milk
Kosher salt and freshly ground pepper
1/2 medium onion, sliced
3 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken broth
2 teaspoons Worcestershire sauce
4 thick slices sourdough bread
3 tablespoons dijon mustard
1 tablespoon prepared horseradish
3/4 pound sliced roast beef
1/2 bunch watercress, woody stems removed
1/4 cup chopped fresh parsley

Steps:

  • Microwave the potatoes on high until soft, about 20 minutes. Using a fork, mash the potatoes in a bowl with 2 tablespoons butter. Add the milk and mash; season with salt and pepper. Preheat the broiler.
  • Meanwhile, melt the remaining 2 tablespoons butter in a skillet over high heat. Add the onion and cook until soft, about 4 minutes. Stir in the flour and cook until slightly brown. Gradually whisk in the chicken broth until smooth. Whisk in the Worcestershire sauce and simmer until thick, about 3 minutes.
  • Toast the bread under the broiler, about 1 minute. Spread the mustard and horseradish on toasts; place each on a plate. Pour some gravy over the toast; top with the roast beef, more gravy, watercress and parsley. Season with salt and pepper. Serve the sandwiches with the potatoes.

This is my version of smorrebrod, which is a Scandinavian open-faced sandwich, and translates to "buttered bread," so what's not to like? It can be topped with anything from cold cuts, pieces of meat or fish, cheese, spreads...all that good stuff. Mmm!

Four 1-inch-thick slices rye bread
1/2 cup sour cream
2 tablespoons chopped preserved lemon
Freshly ground black pepper
2 avocados, sliced
Flaky salt or coarse kosher salt
4 ounces smoked salmon
2 radishes, thinly sliced
4 cornichons, sliced
Crushed red pepper, optional
Handful chopped fresh chives or dill
Sesame seeds (I like a mix of black and white sesame seeds), for sprinkling
Lemon wedges, for serving

Steps:

  • Melt a thin layer of butter in a skillet over medium heat, then add the bread and toast on both sides until golden, 2 to 4 minutes per side. Combine the sour cream, preserved lemon and a few turns of pepper in a small bowl.
  • To assemble, dollop the preserved lemon sour cream all over the bread, then top with slices of avocado. Season the avocado with salt. Nestle in the slices of salmon, radishes and cornichons. Top with black pepper and crushed red pepper, if using. Sprinkle with the chives or dill and sesame seeds, then serve with the lemon wedges. Enjoy!

1 egg, separated
2 tablespoons lemon juice
12 saltine crackers, crushed

4 -6 slices whole wheat bread or 4 -6 slices white bread, lightly toasted
4 -6 teaspoons margarine or 4 -6 teaspoons butter

Steps:

  • For Salmon Spread:.
  • In large bowl, add salmon, lemon juice, crackers, mayonnaise or Miracle Whip and dill weed. Mix and then set aside.
  • Beat egg white until fluffy.
  • Fold in to Salmon mixture.
  • Toast bread and spread with margarine or butter.
  • Pile salmon spread on each toast slice.
  • Cut vine ripe tomatoes in slices; add a medium slice on top of salmon.
  • Add a slice of cheese on top.
  • Place all on baking tray.
  • Broil at 450°F for 5 minutes. Cut diagonally or in half and serve as finger food or with knife and fork.
  • For Salmon Patties:.
  • Mix salmon, whole egg, not separated, lemon juice, crackers, mayonnaise or Miracle Whip, dill weed. Form into patties.
  • Spray Pam into frying pan, cook on both sides until slightly browned.
  • Put on toast, add tomato slices and cheese and broil at 450°F for five minutes.
  • Note: You may also serve the salmon patties with other vegetables as a main dish.

1 medium tomatoes, chopped, about 2/3 cup
2 teaspoons snipped fresh basil
1/8 teaspoon salt
2 medium fresh portabella mushrooms, each about 4 inches in diameter
1 teaspoon balsamic vinegar or 1 teaspoon red wine vinegar
1/2 teaspoon olive oil
1/2 loaf focaccia bread, quartered or 1/2 Italian bread, such as boboli brand
finely shredded parmesan cheese (optional)

Steps:

  • Preheat broiler.
  • Combine tomato, basil and salt in a small bowl,set aside.
  • Clean mushrooms, cut off stems even with caps.
  • Discard stems.
  • Combine vinegar and oil, gently brush mixture over the mushrooms.
  • Place mushrooms on the unheated rack of the broiler pan.
  • Broil mushroom 4 to 5 inches from the heat for 6 to 8 minutes or just till tender, turning once.
  • Drain mushrooms on paper towels.
  • Thinly slice mushrooms.

Open-Face Mushroom Sandwiches With Pecorino Salsa Verde image

There's something really satisfying that comes with making a meal over a live fire, no matter what's on the grate. Grilling king trumpet mushrooms turns them deeply savory and tender with a meaty bite. But if you can't find them, crimini mushrooms will also work just fine. The only condiment the grilled mushrooms need is Pecorino salsa verde, a tasty remix of a sauce I learned during my time as sous-chef at San Francisco mainstay Zuni Café. Pecorino Romano has an assertive flavor on its own, but tempered by herbs and olive oil it's the perfect accompaniment to grilled vegetables. This sandwich works great as a salad too: Just tear the grilled bread into smaller chunks, slice the grilled mushrooms in half, and toss in a bowl before serving.

3 medium shallots, thinly sliced crosswise, rings separated
1 Tbsp. plus 1½ tsp. red wine vinegar
1 tsp. crushed red pepper flakes
1 tsp. freshly ground black pepper
Kosher salt
3 oz. Pecorino Romano, Grana Padano, or Parmigiano-Reggiano
2 cups (loosely packed) mixed tender herb leaves or greens (such as parsley and dill or dill and arugula)
5 Tbsp. extra-virgin olive oil
Mushrooms and assembly
1 lb. king trumpet or crimini mushrooms, trimmed
6 Tbsp. extra-virgin olive oil
6 1"-thick slices country-style bread

Steps:

  • Special equipment
  • Six-eight 10" metal skewers or bamboo skewers, soaked (optional)
  • Pecorino salsa verde
  • Toss shallots, vinegar, red pepper flakes, and black pepper in a small bowl to combine; lightly season with salt (the Pecorino will add some saltiness, so bear that in mind). Let sit 3 minutes.
  • Meanwhile, very thinly slice Pecorino into tiles with a knife (irregular pieces are okay).
  • Add Pecorino, herbs, and oil to pickled shallots and toss gently to combine. Taste and season with more salt if needed; set aside.
  • Mushrooms and assembly
  • Prepare a grill for medium-high heat; clean grate. Working one at a time, set mushrooms on their sides and slice lengthwise ¼" thick to make 3-4 planks per mushroom, depending their size. If your mushrooms are particularly small or you are using crimini, slice ½" thick and thread onto skewers to keep them from falling through grate.
  • Using some of the oil, brush cut sides of mushrooms and transfer to a large bowl or arrange on a rimmed baking sheet if skewered. Lightly brush both sides of each slice of bread with remaining oil and transfer to a platter.
  • Press each slice of bread down across grate for even contact and grill until browned with some lightly charred spots, about 2 minutes per side. The goal is a crunchy exterior with a still chewy center. Transfer bread back to platter.
  • Brush grate to clean. If using a gas grill, turn heat down to medium. A charcoal grill should be at the tail end of medium-high and headed toward medium at this point, but wait a few minutes if needed. Grill mushrooms, turning halfway through and moving around as needed to avoid flare-ups, until golden all over with lightly charred edges, 6-8 minutes for small pieces and 8-10 minutes for large ones. Return to bowl (slide off of skewers if needed). Add Pecorino salsa verde and toss to combine. Spoon mushroom mixture over grilled bread.

Steps:

Steps:

  • Stem shiitake mushrooms. Cut all mushrooms lengthwise into 1/2-inch-thick slices. Heat olive oil in large nonstick skillet over medium-high heat. Add rosemary and stir 10 seconds, then add mushrooms. Sprinkle with salt and pepper. Sauté until mushrooms begin to brown, about 10 minutes. Add shallots and thyme; stir 2 minutes. 2 large eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
4 white bread, slices 1 inch thick
2 tablespoons butter or 2 tablespoons margarine
4 tablespoons strawberry jam or 4 tablespoons red currant jelly
4 ounces thinly sliced cooked turkey or 4 ounces chicken
4 ounces thinly sliced smoked ham
8 slices swiss cheese
powdered sugar

Steps:

  • Whisk together first 4 ingredients in a shallow dish.
  • Dip both sides of bread slices in egg mixture.
  • Melt butter in a large skillet; add bread slices, and cook 2 to 3 minutes on each side or until golden brown.
  • Spread 1 tablespoon strawberry jam on 1 side of each bread slice; top evenly with turkey, ham, and cheese.
  • Place on baking sheet.
  • Broil 5 inches from heat 2-3 minutes or until cheese is melted.
  • Sprinkle powdered sugar, if desired.
  • Serve immediately.

5 bacon slices, halved crosswise
1 (4-inch) square ciabatta or focaccia bread, halved horizontally
3 tablespoons olive oil, divided
4 large thin tomato slices
1 small shallot, chopped
1/2 tablespoon white wine vinegar
1 cup (packed) arugula
2 large eggs
Parmesan cheese shavings

Steps:

  • Cook bacon in heavy large skillet over medium-high heat until brown and crisp; transfer to paper towels to drain.
  • Wipe out skillet. Brush cut sides of bread with 1 tablespoon oil. Place bread, cut sides down, in skillet. Cook over medium heat until golden, about 3 minutes. Place 1 bread square, golden side up, on each of 2 plates. Top each with half of bacon, then 2 tomato slices.
  • Whisk 1 tablespoon oil, shallot, and vinegar in medium bowl to blend. Season dressing with salt and pepper. Add arugula and toss to coat.
  • Heat remaining 1 tablespoon oil in same skillet over medium heat. Crack eggs into skillet. Sprinkle with salt and pepper. Cook until whites are set and yolks are cooked as desired. Top each bread stack with egg, then arugula and cheese.

2 tablespoons olive oil, plus more for drizzling
2 large onions, (about 2 pounds) sliced into 1/2-inch-thick rings
2 cloves garlic, chopped
1 tablespoon fennel seeds, optional
Coarse salt and ground pepper
3 tablespoons balsamic vinegar
4 thick slices country bread
1 pound thinly sliced leftover Grilled Butterflied Leg of Lamb

Steps:

  • Preheat oven to 350 degrees. In a large skillet, heat oil over medium heat. Add onions, garlic, fennel seeds (if using), and 2 tablespoons water; season generously with salt and pepper. Cover, and cook, stirring occasionally, until onions are caramelized, 25 to 30 minutes.
  • Raise heat to high; add vinegar and 2/3 cup water. Boil, scraping up browned bits from bottom of skillet, until liquid is slightly reduced, 2 to 3 minutes. Drain onions in a sieve set over a bowl, reserving liquid.
  • Arrange bread slices on a baking sheet. Top each slice with lamb and onions, and drizzle with oil. Bake until heated through, about 5 minutes. Serve immediately, with reserved liquid spooned over top.

PLAN/PURCHASE
THE BEEF
4 lb beef bottom round, boneless
2 Tbsp grapeseed oil
salt, kosher variety, to taste
black pepper, freshly ground, to taste
THE SAUCE
4 c beef stock, not broth
4 Tbsp flour, all-purpose variety
1 medium yellow onion, diced
2 medium carrots, diced
2 stalk(s) celery, diced
3 clove garlic, smashed
1 Tbsp tomato paste
1 Tbsp dijon mustard, i prefer grey poupon
1 Tbsp tamari sauce
1 sprig(s) fresh rosemary
1 sprig(s) fresh thyme
THE SANDWICH
1 thick slice of bread, toasted
1 slice provolone
2 slice tomato
mash potatoes

Steps:

  • 1. PREP/PREPARE
  • 2. THE BEEF
  • 3. Gather your ingredients.
  • 4. Dust the chuck roast with salt and pepper.
  • 5. Add the grapeseed oil to a large heavy-bottomed pot, over medium heat.
  • 6. When the oil begins to shimmer, add the roast, and sear on all sides.
  • 7. Remove roast from the pot, and reserve.
  • 8. THE SAUCE
  • 9. Place a rack in the lower position, and preheat the oven to 330f (165c).
  • 10. Whisk the flour into the beef stock, and reserve.
  • 11. Add the onions carrots, celery, and garlic to the pot, over medium low heat.
  • 12. Cook them until they begin to soften and release some of their liquids, about 5 to 7 minutes.
  • 13. Add the tomato paste, Dijon mustard, and tamari sauce, and stir until incorporated.
  • 14. Add the beef stock/flour mixture, and stir to combine.
  • 15. Bring up to a simmer, and allow the mixture to thicken, about 4 to 6 minutes.
  • 16. Return the roast to the pot; along with the rosemary, and thyme sprigs.
  • 17. Cover the pot and place in the preheated oven for 3 hours.
  • 18. After 3 hours, remove the roast from the pot, and strain out, and discard the veggies from the sauce.
  • 19. Return the sauce, and the roast to the pan, cover and place back into the oven, until the beef is fork tender, about another hour.
  • 20. THE SANDWICH
  • 21. Place the toasted bread on a plate, and add the provolone cheese, and tomato.
  • 22. Cut some thick slices of the beef, and place on top of the bread.
  • 23. Add the mash potatoes to the side.
  • 24. Drizzle with the yummy beef sauce. Enjoy
  • 25. Chef's Note: I have served this dish without the bread... just the beef, potatoes, and that yummy gravy.
