Provided by Barbara Bennett

Categories     Cookies

Time 30m

Number Of Ingredients 8

2/3 c sugar
1 c butter
1 c cooked mashed carrots
1 tsp vanilla
2 c flour
2 tsp baking powder
powdered sugar
orange juice

Steps:

  • 1. Cook carrots until soft and mash Cool. Beat butter and sugar until fluffy. Blend in cooked carrot mixture. Add vanilla. Sift dry ingredients and slowly add to butter mixture. Bake at 350 degrees for 10-12 minutes. Glaze with a mixture of powdered sugar and orange juice. Thin the powdered sugar until it is a little less than spreadable.

Tips:

  • Mise en Place: Before you start baking, measure and prepare all of your ingredients. This will help you stay organized and ensure that you don't miss anything.
  • Use Fresh Ingredients: Fresh carrots and oranges will give your cookies the best flavor. If you can, buy organic produce.
  • Grate the Carrots Finely: This will help them distribute evenly throughout the cookies and prevent them from becoming too crunchy.
  • Don't Overmix the Dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the Dough: Chilling the dough for at least 30 minutes will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the Cookies at the Right Temperature: The cookies should be baked at 350 degrees Fahrenheit (175 degrees Celsius). If the oven is too hot, the cookies will brown too quickly and the inside will be undercooked.
  • Let the Cookies Cool Completely: Once the cookies are baked, let them cool completely on a wire rack before storing them. This will help them keep their shape and prevent them from becoming too soft.

Conclusion:

Orange carrot cookies are a delicious and healthy snack that can be enjoyed by people of all ages. They are easy to make and can be customized to your own preferences. Whether you like them chewy or crispy, with or without nuts, these cookies are sure to be a hit. So next time you're looking for a sweet treat, give orange carrot cookies a try.
