FOR THE CRUST:
5 oz salted pretzels, finely crushed in a food processor
1/2 c sugar
10 Tbsp butter, melted
FOR THE FILLING:
1 c heavy cream
1 1/2 c powdered sugar, divided
2 tsp vanilla extract
8 oz cream cheese, room temperature
6 oz frozen orange juice concentrate, thawed
additional whipped cream, orange slices, and mini pretzels (for garnish, if desired)

Steps:

  • 1. For the crust: Mix together pretzel crumbs, sugar, and melted butter. Press into the bottom and up the sides of a 9-inch pie pan. Bake in a preheated 325ยบ oven for 15 minutes or until lightly browned. Allow to cool completely.
  • 2. For the filling: Pour heavy cream into a large bowl along with 1/4 cup powdered sugar and vanilla. Use an electric mixer to beat the cream until stiff peaks form. Scrape whipped cream into a separate bowl and set aside.
  • 3. Without cleaning mixing bowl, beat cream cheese and remaining 1-1/4 cups powdered sugar until smooth. Blend in orange juice concentrate and beat until well incorporated. Gently fold 1/4 of whipped cream into orange juice mixture. Repeat with remaining whipped cream, working 1/4 at a time and taking care not to overmix.
  • 4. Pour filling into cooled pie shell and smooth top. Freeze for 6 hours or overnight. Remove from freezer 15 minutes before serving to allow to soften slightly for slicing. Garnish with fresh whipped cream, orange slices, and/or mini pretzels, if desired.

Tips:

  • For the creamiest pie, use full-fat cream cheese and sour cream.
  • Make sure the cream cheese and sour cream are at room temperature before you start mixing them, this will help them blend together smoothly.
  • Don't overbeat the whipped cream, otherwise it will become grainy.
  • If you don't have an ice cream maker, you can still make this pie. Just freeze the orange juice and cream mixture in a shallow dish for 4-6 hours, stirring every hour or so. Once it's frozen, break it up into small pieces and beat it in a stand mixer or food processor until smooth.
  • This pie is best served chilled, so make it ahead of time and let it chill in the refrigerator for at least 4 hours before serving.

Conclusion:

This orange creamsicle pie is a delicious and refreshing dessert that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. Whether you like your pie tart or sweet, creamy or tangy, this recipe has you covered. So next time you're looking for a special treat, give this orange creamsicle pie a try. You won't be disappointed!
