ORANGE CUCUMBER SALAD WITH SUN-DRIED TOMATO DRESSING

Orange Cucumber Salad with Sun-Dried Tomato Dressing image

Categories     Salad     Appetizer     No-Cook     Vegetarian     Quick & Easy     Orange     Cucumber     Spring     Gourmet     Pescatarian     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 4 servings

Number Of Ingredients 11

2 navel oranges
1 (4-inch) piece seedless cucumber (usually plastic-wrapped), thinly sliced crosswise
1/4 cup extra-virgin olive oil
1 tablespoon cider vinegar
1 tablespoon mild honey
1 tablespoon finely chopped drained oil-packed sun-dried tomatoes
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon cinnamon
1/8 teaspoon ground cumin
Pinch of cayenne

Steps:

  • Cut peel, including all white pith, from oranges and cut oranges crosswise into 1/4-inch slices.
  • Scatter orange slices and cucumbers on a platter.
  • Whisk together remaining ingredients in a bowl until combined, then pour over orange slices and cucumbers.

Tips:

  • Choose fresh, crisp ingredients: Use cucumbers that are firm and have a deep green color. Lettuce should be crisp and have no signs of wilting. Oranges should be ripe and juicy.
  • Use a variety of citrus fruits: In addition to oranges, you can also use grapefruits, lemons, or limes in this salad. This will add a variety of flavors and nutrients.
  • Don't overdress the salad: A little bit of dressing goes a long way in this salad. Too much dressing will drown out the flavors of the other ingredients.
  • Chill the salad before serving: This will help the flavors to meld and the salad will be more refreshing.
  • Serve the salad with grilled or roasted chicken or fish: This will make a complete and satisfying meal.

Conclusion:

Orange Cucumber Lettuce Salad is a refreshing, healthy, and delicious salad that is perfect for summer. It is easy to make and can be tailored to your own personal taste. With just a few simple ingredients, you can create a salad that is both flavorful and nutritious. So next time you are looking for a light and easy salad, give Orange Cucumber Lettuce Salad a try. You won't be disappointed!
