4 skinless, boneless chicken breast halves
2 tablespoons prepared Dijon-style mustard
½ cup chopped onion
½ cup packed brown sugar, divided
2 cups orange juice
2 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken in a 9x13 inch baking dish. Spread mustard evenly over the chicken and sprinkle with chopped onion. Coat lightly with 1/4 cup of the brown sugar and pour in enough orange juice to cover chicken. Add butter on top.

1 lb boneless skinless chicken thighs
4 teaspoons Dijon mustard
1/2 cup onion, finely chopped
2 tablespoons butter, cut into bits
1 1/2 cups orange juice
1/4 cup brown sugar, firmly packed (light or dark)
garlic powder, Parsley, Salt, and Pepper to taste

Steps:

  • Preheat oven to 375.

2 garlic cloves, minced
1 teaspoon oregano, crumbled

3 teaspoon dijon mustard
1/2 cup onion; finely chopped
2 tablespoon unsalted butter; cubed
salt and pepper
1 1/2 cup orange juice
1/4 cup brown sugar; firmly packed

Steps:

  • Position a rack in the center of the oven. Preheat the oven to 375 F. Rinse and pat dry chicken. Smear the skin with Dijon mustard. Arrange the chicken skin side down in a shallow roasting pan or baking dish just large enough to hold it in a single layer. Sprinkle the pieces with onions, butter, salt and pepper. Pour orange juice around the chicken. Bake, basting once, for 30 minutes. Turn the chicken skin side up and sprinkle with brown sugar.
