Steps:
- Preheat oven to 350. Combine flour, sugar, wheat germ, baking powder, baking soda, and sea salt. Add orange juice, egg and oil. Mix until just moistened. Do not over mix. Stir in pecans. Grease muffin tins or use paper liners. Bake approximately 25 min.
Tips:
- Use fresh, juicy oranges for the best flavor. If you don't have fresh oranges, you can use 1/2 cup of orange juice concentrate diluted with 1/2 cup of water.
- Grate the orange zest finely, as this will help to release the most flavor. You can also use a microplane grater to get a very fine zest.
- Make sure to toast the pecans before adding them to the muffins. This will bring out their flavor and give the muffins a nice crunchy texture.
- Don't overmix the batter. Overmixing can make the muffins tough.
- Fill the muffin cups only about 2/3 full, as the muffins will rise during baking.
- Bake the muffins until a toothpick inserted into the center comes out clean. The muffins should be golden brown on top.
Conclusion:
Orange pecan muffins are a delicious and easy-to-make treat that are perfect for breakfast, brunch, or a snack. With their bright citrus flavor and crunchy pecans, these muffins are sure to be a hit with everyone who tries them. So next time you're looking for a tasty and satisfying snack, give orange pecan muffins a try!
