3 tablespoons extra-virgin olive oil, 3 turns of the pan
3 cloves garlic, chopped
1 small to medium yellow skinned onion, sliced
1 red bell pepper, seeded, quartered lengthwise, then sliced into 1/2 inch strips
6 pepperoncini hot peppers, chopped
1/2 pint grape tomatoes
1 cup white wine
1/4 cup chopped flat-leaf parsley, a couple of handfuls, chopped
20 to 24 manila clams
Orange and Almond Coucous, recipe follows
2 ounces (1/4 cup) sliced almonds
1 1/2 cups chicken broth
1 tablespoon extra-virgin olive oil
1 1/2 cups plain couscous
2 navel oranges, zested
2 tablespoons chopped flat-leaf parsley, a handful

Steps:

  • Season fish with salt and pepper. Heat a large nonstick skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan. Add fish to pan and cook 2 minutes on each side, carefully transfer to a plate with a thin spatula and loosely cover with foil.
  • Add another tablespoon extra-virgin olive oil, 1 turn of the pan, then add garlic, onions, red bell peppers and chopped hot peppers. Season veggies with salt and pepper. Saute 5 minutes, stirring frequently. Add tomatoes and cook 1 minute more. Deglaze the pan the wine and bring up drippings with a wooden spoon. Slide fish back into pan and add manila clams. Cover the pan and reduce heat to simmer. Cook 5 minutes. Sprinkle parsley over the fish and clams and discard any unopened clams. Serve fish and clams on a bed of Orange and Almond couscous.
  • Toast nuts in the bottom of a medium saucepot over medium heat. Transfer toasted nuts to a dish and reserve. Return pot to the stove top. Add broth and oil, cover pot and raise heat; bring the broth to a boil. Remove pot from heat, immediately. Add couscous, orange zest and parsley, then stir. Cover and let couscous stand 5 minutes. Fluff cooked couscous with fork and toss with toasted almonds. TIDBIT: Slice zested oranges and serve them after dinner.

This is my absolute favorite fish recipe for its wonderful flavor and ease of preparation. I love Mediterranean food and the mild, tender Roughy is a fantastic compliment to the fresh and vibrant feta, caper and tomato topping. This is a great, healthy recipe that will have you feeling like you just ate in a fancy restaurant. I adapted this recipe from a recipe found at epicurious.com. As usual, substituting or eliminating any ingredients will greatly change the flavor as each ingredient compliments the other.

4 (6 ounce) orange roughy fillets, 1/2 inch thick
4 ounces feta cheese with dried basil and tomato or 4 ounces plain feta cheese
1/4 cup low-fat sour cream
1/4 cup finely chopped red onion
1 garlic clove, minced finely
3 tablespoons capers, drained and rinsed
2 small plum tomatoes, seeded, and finely chopped
2 teaspoon lemons, rind of, grated
1 teaspoon dried oregano
1/2 teaspoon fresh ground black pepper
1/2 teaspoon kosher salt
1 -2 teaspoon white wine (optional)

Steps:

  • Preheat oven to 400°F.
  • Line baking sheet with foil.
  • Lightly spray foil with non-stick spray.
  • Season fish on both sides with kosher salt and fresh ground pepper.

1 garlic clove, finely chopped
1 -2 tablespoon extra virgin olive oil
4 (4 -6 ounce) fish fillets
2 cups roasted red peppers, chopped (preroasted, storebought is fine)
1/2 onion, chopped
1/2 cup black olives (preferably halfed or sliced)
1 pinch salt or 1 pinch pepper, to taste

Steps:

  • Preheat your oven to 400 degrees F.
  • Heat the EVOO in a nonstick skillet and sautee the garlic for a min or so.
  • Add the onions, cook about halfway to done. Turn off the stove.
  • Add the roasted red peppers last, they're already cooked so only need to be heated through for a min or so.
  • Place each raw fillet in their own aluminum foil pack or 2 fillets per 1 pack if you want to save foil (i find 4 in one pack is too difficult to work with).
  • Spoon the onion/pepper/garlic mixture made above over the fillets and then the olives too.
  • Close the foil around the fish, leaving a teeny hole for steam escape.
  • Bake for about 15-20 minutes, fish should flake easily w/ a fork.

½ tsp smoked paprika
½ tsp cumin seeds
¼ tsp ground cinnamon
¼ tsp orange zest
4 wild salmon fillets (140g each)
600g baby potatoes
2 red peppers, halved and deseeded
1-2 green chillies, deseeded and finely chopped
1½ tbsp extra virgin olive oil
2 tbsp lemon juice
2 tbsp lemon zest
4 spring onions, finely sliced
320g radishes, thinly sliced
12 Kalamata olives, quartered
2 small oranges, peeled and chopped (leave the pith on)
5 tbsp chopped mint

Steps:

  • Mix the paprika, cumin seeds, cinnamon and orange zest, then rub the mixture over the salmon fillets.
  • Boil the baby potatoes whole in their skins for 15 mins until tender. Drain, then thickly slice.
  • Heat the grill to high and grill the peppers for 5 mins on each side or until cooked through and charred, then peel off their blistered skins and dice the flesh. Put in a bowl with the chillies, olive oil, lemon juice and zest, spring onions, radishes and sliced potatoes.
  • Cook the salmon under the grill for 5 mins, skin-side up, then turn. If not already cooked, grill for a further 1-2 mins. (Wild salmon cooks much faster than farmed.)
  • Toss the olives, chopped orange and mint through the potatoes and serve half with half of the salmon. Chill the remainder for another day. Will keep covered and chilled for up to two days.
