SPICE BUNDT CAKE
Steps:
- Preheat oven to 350F.
- Butter and flour a 10 to 12 cup bundt pan (or spray with a baking spray that includes flour), and refrigerate while preparing the cake.
- Whisk flour, baking powder, salt, cinnamon, ginger, cloves, & nutmeg together in a bowl and set aside. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, & brown sugar together on high speed until light and fluffy, about three minutes. Scrape down the sides of the bowl and add the eggs, one at a time, scraping between additions. In a small bowl or measuring cup, stir together oil, vanilla, & buttermilk (or substitution). In the bowl with the butter and sugars, alternate additions of the flour and buttermilk mixtures at low speed, beginning and ending with flour. Mix just until combined and do not overwork the batter. Scrape down the sides of the bowl to make sure all ingredients are well incorporated.
- Pour the batter into the prepared bundt pan, smooth out the top, and firmly pound the pan against the countertop several times to tap out any air bubbles. Bake in the center of the oven for 50 to 55 minutes, or until a toothpick or cake tester comes out clean from the center of the cake.
- Transfer the pan to a wire rack to cool for about 20 to 30 minutes before turning the cake out onto the rack to cool completely. Once cool, drizzle with cream cheese glaze (recipe below) if desired. Cake should keep, in an air tight container at room temperature, for about 3 or 4 days.
ORANGE-SPICE BUNDT® CAKE WITH GROUND CHERRIES
I came up with this cake as a way to use the massive amounts of ground cherries (also known as Cape gooseberries or husk cherries) that grew in my garden this year. The ground cherries have a subtle pineapple-y flavor and a beautiful orange color that makes a great addition to this spicy Bundt® cake.

Steps:
- Preheat the oven to 350 degrees F. Grease a Bundt pan with cooking spray; if your Bundt pan isn't nonstick, oil it and dust with flour.
- In a large bowl, combine the flour, cornmeal, baking powder and salt. Whisk until well combined.
- In another bowl, stir together the buttermilk, orange zest and orange blossom water.
- In a stand mixer fitted with the paddle attachment, cream the butter and sugar together on medium speed until light yellow and fluffy, about 5 minutes. Reduce the speed and mix in the eggs, one at a time. Mix in half the flour mixture, then all of the buttermilk mixture, and, finally, the remaining half of the flour; at each step, mix until just combined. Pour the batter into the prepared Bundt pan.
- Bake on the middle rack until golden brown and just beginning to pull away from the edges, 35 to 40 minutes. Cool the cake in the pan on a rack for 20 minutes.
- Meanwhile, make the ganache: Bring the cream to a simmer in a heavy-bottomed saucepan over medium heat, about 3 minutes.
- While the cream is heating, combine the white chocolate chips, orange zest and orange extract in a heat-proof glass bowl, and set the bowl over the cream. When the cream reaches a simmer, pour it over the chocolate and let sit for 1 minute to begin to melt; then stir with a rubber spatula until smooth. Allow to cool slightly, about 10 minutes, stirring every couple minutes to ensure even cooling.
- Invert the cake onto a rimmed plate and drizzle the top with ganache. Serve warm or at room temperature.

ORANGE CREAM BUNDT CAKE RECIPE - (3.3/5)

Steps:
- Preheat oven to 350F Generously coat a bundt pan with baking spray (I use Baker's Joy)... be sure to get all the nooks and crannies. Beat the eggs and to this add the milk, orange juice, vegetable oil and the zest of one orange. Set aside. In a separate bowl, whisk together the flour, sugar, baking powder and salt. Add the liquid mixture to the flour mixture and stir until just combined. Add the cream cheese, one tablespoon at a time, and combine well after each addition. Once all the cream cheese has been added, continue to mix for 2 minutes. Pour batter into prepared bundt pan and bake directly on the rack (do NOT bake the bundt pan on a cookie sheet... the air needs to circulate and a cookie sheet will prevent that) in the preheated oven for 40 minutes, or until a knife inserted halfway comes out cleanly. Cool 5 minutes in pan. While the cake is cooling in pan, make the syrup: In a saucepan combine 1/4c orange juice and 1/4c granulated sugar. Bring to a slow boil stirring until sugar has dissolved and let simmer until cake has cooled for 5 minutes in the pan then remove from heat. Invert cake onto cooling rack. Place a sheet of waxed paper under the cooling rack and immediately brush orange juice mixture onto warm cake. Let the cake absorb all of the syrup as it will make the cake moist and full of flavor To make the glaze, combine powdered sugar and milk... let yourself be the judge as to how much glaze you want. If you want it thinner, add small amounts of milk until you have the consistency and amount you want then pour it over the cake... brush on if desired.
Tips:
- For a moist and flavorful cake, use fresh orange juice and zest. If you don't have fresh oranges on hand, you can substitute bottled orange juice. However, fresh is always best!
- Make sure your butter and eggs are at room temperature before you start baking. This will help the ingredients to blend together more easily and will result in a smoother batter.
- Don't overmix the batter. Overmixing can lead to a tough, dense cake. Mix just until the ingredients are combined.
- Use a bundt pan that has been greased and floured. This will help the cake to release easily from the pan.
- Bake the cake in a preheated oven. This will help to ensure that the cake bakes evenly.
- Don't open the oven door during baking. This can cause the cake to fall.
- Let the cake cool completely before glazing. This will help the glaze to set properly.
Conclusion:
This orange spice bundt cake is a delicious and festive treat that is perfect for any occasion. The cake is moist and flavorful, with a beautiful orange glaze that adds a touch of sweetness and tang. The ground cherries add a unique and delicious flavor and texture to the cake. If you're looking for a special cake to impress your friends and family, this orange spice bundt cake is the perfect recipe for you.
