Steps:

  • Over low heat, add water to your saucepan and slowly incorporate the butter, a few tablespoons at a time. Whisk together to make sure the water and butter combine and doesn't separate.
  • Add the lemon zest and sprig of thyme and give it a stir. Add the shrimp and poach for eight to 10 minutes. Remove shrimp and set aside. Discard the sprig of thyme.
  • In the same saucepan and over low heat, add garlic, shallots and the orzo. Salt and pepper to taste. Stir until all the liquid has been absorbed.

5 slices (5 oz) bacon, diced
1 medium yellow onion, finely chopped
2 cloves garlic, minced
1½ cups orzo
4 cups chicken broth
Heaping ½ teaspoon salt
¼ teaspoon freshly ground black pepper
1¼ teaspoons Cajun or Creole seasoning, such as Emeril's Essence
2 pounds extra-large (21/25) shrimp, peeled and deveined
1 cup frozen green peas (no need to thaw)
2 tablespoons fresh lemon juice (from 1 lemon)

16 asparagus, thin
1 3/4 cups orzo pasta
6 tablespoons Smart Balance butter spread
1/2 lb medium shrimp, shelled and deveined
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup low sodium chicken broth
2 tablespoons flat leaf parsley, chopped
1 cup parmesan cheese, grated and divided

Steps:

  • Bring a large saucepan of salted water to a boil and cook the asparagus until tender. Remove with a slotted spoon and set aside.When slightly cooled cut into 1 inch lengths.

2 ½ cups vegetarian chicken-flavored broth
2 cups low-sodium vegetable broth
3 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
½ medium yellow onion, diced
¾ teaspoon red pepper flakes
sea salt and cracked black pepper to taste
1 medium zucchini, halved lengthwise and sliced
2 cups uncooked orzo pasta
¼ cup dry white wine
1 hard cheese rind
½ teaspoon sea salt
1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
1 cup frozen peas
½ cup finely grated Grana Padano cheese
½ cup chopped fresh parsley
1 medium lemon, zested and juiced

Steps:

  • Pour vegetarian chicken broth and vegetable broth into a medium saucepan over over medium heat; bring to a boil. Reduce heat to simmer and cover until needed.
  • Melt butter and oil together in a 12-inch skillet over medium heat. Add onion, pepper flakes, and a pinch of sea salt and pepper.
