4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves

MEDITERRANEAN ORZO SALAD

Mediterranean Orzo Salad image

This light and refreshing cold pasta salad is loaded with the flavors of the Mediterranean, and pairs well with grilled proteins, such as fish, pork, chicken or steak. If you make this in advance, reserve a bit of the dressing to add right before serving, as the pasta has a tendency to soak up the dressing as it sits over time.

Time 35m

Yield 5 cups, 6 serving(s)

Number Of Ingredients 11

1 tablespoon butter
1 tablespoon olive oil
3/4 cup yellow red onion (if desired, use red onion if you choose to prepare this as a salad)
1 1/2 cups diced celery
1 1/2 cups orzo pasta (cooked in vegetable or chicken broth and drained)
1/2 cup dried cranberries (reduced from 3/4 cup)

  • Add diced onion, cooking 4 minutes or until onions are translucent and golden brown.
  • Add celery; cook 4 minutes longer.
  • In a large bowl, combine the drained orzo, cooked celery and onion, cranberries, nuts, basil, lemon juice, salt and pepper to taste.
  • Toss gently.
  • At this point, if desired, the orzo is now ready to be stuffed.
  • Variations:.
  • As a SIDE DISH: Heat up the olive oil and butter in a saute pan on medium heat. Saute the celery, onion and UNCOOKED orzo pasta until lightly browned.
  • Add 3 cups water or broth and bring to boil. Cover pan, reduce heat and simmer on low for 20 minutes or until liquid has evaporated.
  • Remove from heat and stir in the cranberries, pecans, fresh basil, lemon juice, salt and pepper.
  • To make it as a SALAD: boil orzo and cook until tender. Drain and rinse under cool water. Drain again. Transfer orzo to a salad bowl. Add the diced onion, minced celery and shredded basil to the pasta. In a small non-reactive bowl, whisk together about 2 tablespoons olive oil, 2 tablespoons lemon juice (play around with the proportion and amount of oil and lemon juice as desired), salt and pepper. ORZO SALAD WITH ROASTED CARROTS AND DILL

Orzo Salad with Roasted Carrots and Dill image

Lemon juice gives orzo and roasted carrots a bright, fresh taste.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 9

3 pounds carrots (about 4 bunches)
4 garlic cloves, unpeeled
1/4 cup extra-virgin olive oil
Coarse salt
1 pound orzo (Greek pasta)
Grated zest and juice of 2 lemons
4 scallions, white and light-green parts, roughly chopped
1/2 cup loosely packed fresh dill, roughly chopped
Freshly ground pepper

Steps:

  • Preheat oven to 450 degrees with a rack in lower shelf. Cut carrots diagonally into 2-inch pieces. On a rimmed baking sheet, toss carrots and garlic with 2 tablespoons oil and a pinch of salt. Roast until carrots are tender and browned, about 15 minutes. Transfer sheet to a wire rack to cool. Squeeze garlic cloves from skins; mince to form a coarse paste. Set aside.
  • Bring a large saucepan of water to a boil; add salt. Stir in orzo; cook until it is al dente according to package instructions, about 7 minutes. Drain; while still hot, transfer orzo to a large bowl, and toss with remaining 2 tablespoons oil. Let cool slightly, and add roasted carrots.
  • Meanwhile, in a small bowl, mix together lemon zest, lemon juice, scallions, and roasted garlic. Add dill, and pour mixture over orzo mixture. Stir to combine; season with salt and pepper. Serve, or store, covered with plastic wrap, in refrigerator up to 1 day; bring to room temperature before serving.

Tips:

  • Use a variety of colors and textures in your salad for visual appeal. For example, the recipe suggests using red radishes, yellow celery, and green dill.
  • Don't be afraid to experiment with different herbs and spices. The recipe calls for dill, but you could also try parsley, basil, or mint.
  • If you're short on time, you can use pre-cooked orzo. However, if you have the time, cooking the orzo yourself will give it a better flavor and texture.
  • Orzo salad is a great make-ahead dish. You can make it up to 2 days in advance and store it in the refrigerator.
  • Serve orzo salad as a side dish or main course. It's also a great option for potlucks and picnics.

Conclusion:

Orzo salad is a delicious, refreshing, and versatile dish that's perfect for any occasion. It's easy to make and can be customized to your liking. So next time you're looking for a quick and easy meal, give orzo salad a try.
