This recipe is so delicious and is easy to make! I never have to worry about leftovers when I make this hit!!

Number Of Ingredients 8

4 boneless skinless chicken breasts
1 small onion, diced
1 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, minced
3 hard-boiled eggs, peeled and chopped
1/3 cup sweet pickle relish
1 cup mayonnaise

Steps:

  • Put the chicken and onion in a large saucepan and add enough cold water to cover it.
  • Add the salt and pepper.
  • Cover and bring to a boil over medium-high heat.
  • Reduce the heat to medium-low and simmer just until the chicken shows no signs of pink, about 20 minutes.
  • Remove from heat and let it cool in the liquid.
  • Cut the meat into 3/4 inch pieces and let them cool completely.
  • In a large bowl, mix the chicken, garlic, eggs, and relish together.
  • Stir in the mayonnaise.
  • Cover and refrigerate until it's chilled, about an hour.

Rotisserie chicken (1/2 bird)
1 cup sour cream
1/2 cup mayo
4 stalks celery, chopped finely
1/3 cup sweet onion, chopped finely
Salt 1 teaspoon
Sugar 1 teaspoon
1 tablespoon Lemon juice
1 teaspoon Parsley
White vinegar - 1 tbsp

Steps:

  • 1. Remove chicken from the bones - remove the skin as well (not great in this salad) 2. You will use about 1/2 of the chicken from a Costco rotisserie chicken. You want to chop it up finely - I used a food chopper, and it worked great. 3. Chop celery and sweet onion very finely - again, I used a food chopper. 4. In a separate bowl, mix together mayonnaise, sour cream, salt, sugar, lemon juice, parsley, and vinegar. 5. Combine chicken, celery, and onion in a large bowl. 6. Fold in the dressing and combine together. 7. Refrigerate a few hours for best results!

1 cup boiling water
2 (3 7/8 ounce) packages lime gelatin
1/2 lb miniature marshmallow
1 cup pecans, chopped (optional)
1 (6 ounce) can crushed pineapple
1/2 cup shredded coconut (optional)
1 (6 ounce) carton cottage cheese
1/2 pint Cool Whip
maraschino cherry, for decoration (optional)

Steps:

  • Pour boiling water over gelatin & marshmellows.
  • Stir until marshmellows are partically melted.
  • Add crushed pineapple.
  • Chill until partically congealed.
  • Fold in nuts & cottage cheese, then whipped cream.
  • Decorate with cherries if desired.
  • Chill until firm.
