Every winter, I make lots of cheese logs and freeze them for when I'm expecting company or need to take food to someone's home. 3 packages (8 ounces each) cream cheese, softened
2 tablespoons steak sauce
1/4 cup Miracle Whip
1 garlic clove, peeled and minced, or 1 teaspoon garlic powder
1 small onion, finely chopped
2 cans (3-3/4 ounces each) smoked oysters, well-drained and chopped
3 cups chopped pecans, divided
3 tablespoons chili powder
Minced fresh parsley

Steps:

  • In mixer bowl, combine the cheese, steak sauce, Miracle Whip, garlic and onion. Stir in oysters and 1 cup of pecans. Shape into two 9-in. logs. Roll logs in mixture of chili powder, remaining pecans and parsley.

This is a great appetizer recipe I got from my grandmother. It is soooo tasty and great for any cocktail party. Simply serve with crackers.

8 ounces cream cheese
2 tablespoons mayonnaise
2 tablespoons milk
1/2 teaspoon garlic powder
salt
white pepper
1 (3 2/3 ounce) can smoked oysters, chopped
1/2 cup chopped pecans
parsley
paprika
6 ounces chopped black olives

Steps:

  • Soften cream cheese and add next 4 ingredients plus olives.
  • Spread on wax paper and chill in frig till hardened.(make long rectangle).
  • Remove from frig and spread with oysters and pecans.
  • Roll into log form and garnish with parsley and paprika.
  • Chill in Frig. Serve with assorted crackers.

2 (8 ounce) packages cream cheese, room temperature
1 tablespoon mayonnaise
2 teaspoons Worcestershire sauce
2 small garlic cloves, minced
2 tablespoons grated onions
1 dash hot pepper sauce
salt
2 (3 5/8 ounce) cans smoked oysters
melba toast or cracker

Steps:

  • In medium bowl (not in food processor) cream cheese with wooden spoon. Stir in mayonnaise, Worcestershire, garlic, onion, hot pepper sauce, and salt to taste. Blend well.
  • Lightly oil a large piece of waxed paper and spread cheese mixture into 16 x 6 inch rectangle.
  • In sieve, drain oysters and rinse with cold water. Pat dry with paper towels and chop finely. Spread on top of cheese rectangle, leaving small border all around. With spatula and using waxed paper as a guide, roll up jelly roll style as tightly as possible, staring from long side. Wrap well and refrigerate overnight.
  • To serve, cut roll into 1/4 inch slices with very sharp knife. Dip knife into hot water occasionally for neater slices. Place on top of rounds of melba toast. Makes about 60 appetizers.
