4 fresh basil leaves, chopped
4 fresh sage leaves, chopped
1 sprig rosemary, chopped

1/2 cup extra-virgin olive oil

Steps:

16 ounce can hearts of palm, drained with all of the liquid reserved
2 cups chicken stock, homemade or best quality canned
1 large egg yolk, lightly beaten
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons finely chopped parsley, for garnish
3/4 cup plain yogurt, for garnish

Steps:

  • Cut the hearts of palm into 3/4inch rounds and quickly saute in butter. Add reserved liquid and chicken stock. Cook over medium heat stirring for 2 to 3 minutes. Transfer to a blender and puree. Strain through a sieve and return to a sauce pan. Temper 1 egg yolk with some of the hot liquid and whisk into the puree. Season with salt and pepper. Ladle into warm soup bowls. Combine the parsley and yogurt and place a dollop on top of the soup as a garnish.

350g plain flour , plus extra for rolling
4 tbsp vegetable shortening or butter
1 egg
1 tsp vinegar
2 tbsp cachaça or white rum
4-5 tbsp water
vegetable oil , for frying
1 tbsp vegetable oil
1 medium onion , chopped
1 garlic clove
2 ripe tomatoes , deseeded and diced
1 tbsp chopped parsley
400g tin hearts of palm , drained and roughly chopped
3 tbsp cream cheese

Steps:

  • You can make the dough by hand or use a food processor. Place the flour in a large bowl or food processor with some salt. Add the vegetable shortening and mix well or pulse until it makes crumbs. Stir in the egg, vinegar and the rum, then pour the water gradually until the mixture comes together as a dough. Knead the mixture once more, wrap in cling film and chill for 1 hr.
  • Make the filling by heating the oil in a frying pan. Add the onion and garlic and season. Fry for 5 mins until soft and add the tomatoes, parsley and hearts of palm. Fry for another min and remove from heat.
  • Halve the dough and using a floured surface, roll out the dough into a large square about 30cm X 30cm. Use a pastry cutter to make 6 squares. Repeat with the second piece of dough. If it's too soft, place it in the fridge, before adding the filling, to firm up again.
  • Using a pastry brush lightly brush the edges of the square with water. Add 2 tbsp of the filling, a tiny dollop of cream cheese and fold over. Use a fork to press the edges together and seal. Chill until ready to fry. Place the pastries on a layer of baking paper, top with another and then wrap in cling film to stay dry until using.
  • Heat 7.5-10cm vegetable oil in a wok or small heavy saucepan. It's ready when a small piece of bread dropped in sizzles immediately. Fry the pastels in batches for about 2-3 mins or until golden brown and bubbly. Drain on kitchen paper and fry the rest. Serve warm with napkins.

1 tablespoon olive oil, or as needed
2 red onions, finely chopped
½ pound ground beef, or more to taste
½ pound bacon, chopped
¼ cup white wine, or as needed
2 (26 ounce) packages chopped tomatoes (such as Pomi®)
1 (6 ounce) can tomato paste
4 tablespoons white sugar, or more to taste
salt to taste
1 (16 ounce) package rotini pasta (such as Barilla®)
4 tablespoons grated Parmesan cheese, or more to taste
⅓ pound chopped provolone cheese
⅓ pound chopped mozzarella cheese

Steps:

  • Heat olive oil in a skillet over low heat. Add onions and cook slowly until moisture has evaporated but onions are not dark brown, about 5 minutes. Add ground beef and bacon. Increase heat to medium-high and cook, stirring frequently, until meat is browned and crumbly, 5 to 7 minutes.
  • Pour wine into the skillet and cook until evaporated, 1 to 3 minutes. Add chopped tomatoes and tomato paste. Fill tomato paste can with water and pour in. 1 tablespoon butter
2 teaspoons minced garlic
2 cups cream
1 ¾ cups grated Parmesan cheese
1 yellow onion, minced
1 tablespoon olive oil
1 cup sliced fresh mushrooms
1 (7 ounce) can hearts of palm, rinsed, drained, and cut into 1/2-inch pieces
1 (15.25 ounce) can Mexican-style corn, drained
1 cup arugula
1 (15 ounce) can green beans, drained
salt to taste
¾ cup grated Parmesan cheese
