PERFECT PAN-SEARED SHRIMP WITH GARLIC BUTTER

Perfect Pan-Seared Shrimp With Garlic Butter image

from America's Test Kitchen TV show. Their note: The cooking times below are for 21/25 shrimp (that is, the size of the shrimp is such that there are 21 to 25 in 1 pound). If 21/25 shrimp are not available, adjust cooking times slightly. Either a nonstick or traditional skillet will work for this recipe, but a nonstick will simplify cleanup.

Tips:

  • To devein shrimp, use a sharp knife to make a shallow cut along the back of the shrimp, from the head to the tail. Remove the vein with the tip of the knife.
  • If you don't have a food processor to make the romesco sauce, you can chop the ingredients by hand. Just be sure to chop them very finely.
  • To make the creamy grits, use heavy cream instead of milk for a richer flavor.
  • If you don't have collard greens, you can use kale or spinach instead.
  • To pan-sear the shrimp, make sure the skillet is hot before adding the shrimp. This will help to create a nice sear on the shrimp.
  • Don't overcrowd the skillet when pan-searing the shrimp. This will prevent the shrimp from cooking evenly.
  • Season the shrimp with salt and pepper before pan-searing.
  • Serve the pan-seared shrimp with the romesco sauce, creamy grits, and greens immediately.
