Pan-Seared Steaks With Worcestershire And Butter Sauce image

Shallots with melted butter, Dijon mustard, and tangy worcestershire sauce make a luscious topping for a nice, thick steak.

Time 25m

Yield 4

Number Of Ingredients 10

4 beef steaks (8 ounce each), 1 to 1 1/4-inches thick, fat trimmed
salt and black pepper, to taste
2 tablespoons vegetable oil, divided use
2 shallots, minced
1 1/2 cup low-sodium chicken broth
1 tablespoon Worcestershire sauce
1/2 teaspoon Dijon mustard
3 tablespoons cold unsalted butter, cut into 1-tablespoon sized pieces
1 tablespoon minced fresh parsley
salt and black pepper, as needed

Steps:

  • Dry the steaks with paper toweling and season liberally with salt and pepper. Set aside. Heat half of the oil in a large, heavy skillet over medium-high heat. When hot, add the steaks and brown on one side for 4 minutes. Turn the steaks and let cook for 4-6 minutes or until desired doneness. Remove the steaks to a plate and lightly cover with foil. Let the steaks rest for 5 minutes. Add the remaining oil to the skillet. When hot, add the shallots and cook, stirring frequently, until soft, about 2 minutes. Add the broth to the skillet and stir, scraping up any browned bits on the bottom of the pan. Bring to a simmer and let cook for 5 minutes. Add the Worcestershire sauce, mustard, and any juices accumulated from the resting steaks. Stir well. Reduce the heat to low. Add the butter one tablespoon at a time, stirring well after each addition. Remove the pan from the heat. Stir in the parsley. Taste the sauce and adjust the seasoning as needed with salt and pepper. Serve the sauce over the steaks.

Yield 4 servings

Number Of Ingredients 6

4 tablespoons (1/2 stick) butter
2 tablespoons olive oil
2 large onions, sliced
1 boneless sirloin steak (about 2 pounds)
Salt and pepper
1/2 cup bourbon

Steps:

  • In a large skillet, melt 2 tablespoons of the butter with 1 tablespoon of the olive oil over medium heat. Add the onions and cook, stirring occasionally, until golden, about 15 minutes. Transfer the onions to a bowl and set aside.

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Time 30m

Number Of Ingredients 4

1 tablespoon vegetable oil
1 boneless rib-eye or New York strip (shell) steak, 1 1/2 to 2 pounds and 2 1/2 inches thick, room temperature
Coarse salt and cracked (butcher-grind) pepper
Steak Butter

Steps:

  • Preheat oven to 400. Heat oil in a large cast-iron or other ovenproof skillet (not a nonstick) over medium-high until it begins to smoke. Pat steak dry with paper towels. Season each side with 1 teaspoon coarse salt and 1 teaspoon cracked pepper.
  • Cook steak in skillet over medium-high heat until a dark crust has formed, 5 to 7 minutes per side (reduce heat if meat is browning too quickly). Holding steak with tongs, quickly brown all edges, turning as necessary; lay steak flat in skillet.
  • Transfer skillet to oven. Roast until an instant-read thermometer inserted in the thickest part of steak registers desired doneness, 5 to 15 minutes. Transfer to a plate; spread with 1 tablespoon Steak Butter. Cover loosely with aluminum foil, and let rest 5 to 10 minutes (temperature will then rise another 5 to 10 degrees). Slice across the grain; serve with remaining Steak Butter. Cover and refrigerate any leftovers, up to 2 days.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

3 tablespoons vegetable oil
2 large red onions, large, peeled & cut into 1/2 slices, rings separated
1/2 teaspoon salt
3 (8 -10 ounce) boneless strip steaks
3 garlic cloves, minced
1/2 cup balsamic vinegar, plus
1 tablespoon balsamic vinegar
1 teaspoon fresh rosemary, minced
1 tablespoon light brown sugar
salt
pepper

Steps:

  • Heat 2 tablespoons of the oil in a large heavy skillet over medium heat.
  • Add onions & salt and cook, stirring often, until lightly browned, about 10 minutes. Transfer to a bowl. Wipe out skillet with paper towels.
  • Add remaining oil to skillet & adjust flame to medium high.
  • Pat steaks dry & add to oil. Leave them alone for for 4-5 minutes then flip & cook other side 3-4 minutes. Remove & wrap tightly in foil.
  • Discard any remaining fat in skillet, return onions to pan & reduce temp to medium. Add garlic & cook 30 seconds.
  • Add 1/2 cup vinegar, rosemary and brown sugar and cook, scraping up browned bits, until thick & syrupy, about 2 minutes.
  • Unwrap steak & pour any accumulated juices in skillet along with remaining vinegar. Salt & pepper to taste.
  • Slice steaks crosswise in 1/4 slices & serve topped with onions & sauce.

Tips:

  • Choose the right cut of steak: Some cuts, like ribeye or strip steak, are better suited for pan-searing than others. Look for steaks that are at least 1 inch thick and have a good amount of marbling.
  • Use a heavy-bottomed pan: A heavy-bottomed pan will help to evenly distribute heat and prevent the steak from sticking.
  • Get your pan hot before adding the steak: The pan should be hot enough to sear the steak quickly and create a nice crust.
  • Don't overcrowd the pan: If you're cooking multiple steaks, make sure to give them enough space in the pan so that they can sear properly.
  • Season the steak generously: Season the steak with salt, pepper, and any other desired spices before cooking.
  • Cook the steak to your desired doneness: The cooking time will vary depending on the thickness of the steak and your desired doneness.
  • Let the steak rest before slicing: Once the steak is cooked, let it rest for a few minutes before slicing. This will allow the juices to redistribute throughout the steak.

Conclusion:

Pan-seared steak is a classic dish that is sure to impress. By following these tips, you can cook a perfectly seared steak that is juicy, flavorful, and tender. Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
