Tips:

  • Use high-quality ingredients: For the best results, use fresh eggs, high-quality flour, and pure vanilla extract. Using good-quality ingredients will give your pão de ló a rich, flavorful taste.
  • Beat the eggs and sugar until thick and pale: This step is essential for creating a light and airy pão de ló. Make sure to beat the eggs and sugar until they are thick and pale, and have increased in volume.
  • Fold in the flour gently: Be careful not to overmix the batter, as this can result in a tough, dense pão de ló. Gently fold in the flour until it is just combined.
  • Bake the pão de ló in a preheated oven: This will help to ensure that the pão de ló rises evenly and has a golden brown crust.
  • Do not open the oven door during baking: Opening the oven door during baking can cause the pão de ló to collapse. Resist the temptation to peek!
  • Test the pão de ló for doneness: Insert a toothpick into the center of the pão de ló. If it comes out clean, the pão de ló is done. If it comes out with wet batter, continue to bake for a few more minutes.
  • Let the pão de ló cool completely: Allow the pão de ló to cool completely before serving. This will help to prevent it from falling apart.
