2 cups chicken broth
2 cups uncooked instant rice
1 pound uncooked medium shrimp, peeled and deveined
1/2 cup chopped green onions
2 tablespoons butter
2 tablespoons olive oil
2 teaspoons minced garlic
3 tablespoons lemon juice
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese
2 tablespoons minced fresh parsley

Steps:

  • In a small saucepan, bring broth to a boil. Stir in rice; cover and remove from the heat. Let stand for 5 minutes. , Meanwhile, in a large cast-iron or other heavy skillet, cook shrimp and onions in butter and oil over medium heat until shrimp turn pink, 4-5 minutes. 1/4 teaspoon coarse salt

2 cups reduced-sodium chicken broth
2 tablespoons lemon juice
1 cup uncooked long grain rice
1/2 cup chopped onion
1 large egg
2 tablespoons fat-free milk
3/4 cup panko bread crumbs
2/3 cup grated Parmesan cheese, divided
1 teaspoon dried oregano
1 pound boneless skinless chicken breasts
2 tablespoons olive oil
1 cup frozen peas (about 4 ounces), thawed
1/4 teaspoon grated lemon zest
Freshly ground pepper, optional

Steps:

  • In a saucepan, bring broth and lemon juice to a boil. Stir in rice and onion; return to a boil. Reduce heat; simmer, covered, until liquid is almost absorbed and rice is tender, 15-20 minutes., Meanwhile, in a shallow bowl, whisk together egg and milk. In another bowl, toss bread crumbs with 1/3 cup cheese and oregano. Pound chicken breasts with a meat mallet to 1/4-in. thickness. 2 cups arborio rice
1 medium onion, finely chopped
2 tablespoons fresh minced garlic
1/3 cup chopped fresh parsley
1/3 cup butter, room temperature
1/2 teaspoon dried basil (can use more or use about 1/4 cup chopped fresh basil)
1 tablespoon fresh lemon juice
1/2 teaspoon grated lemon zest (you can add in a bit more if desired)
salt and black pepper
1 cup grated parmesan cheese

Steps:

  • Heat about 2-3 tablespoons vegetable oil in a large heavy pot.
  • Add in the onion and garlic; saute for about 3 minutes.
  • Add in 4 quarts water and bring to a boil over high heat.
  • Add in the rice; boil until the rice is JUST tender (about 15-16 minutes; drain and RESERVE 1/2 cup cooking liquid.
  • In a medium bowl mix together the chopped parsley, softened butter, basil, lemon juice and lemon zest.
  • Add the hot rice to the mixture; stir to melt butter.
  • Add in reserved 1/2 cup cooking liquid and grated parmesan cheese; stir well to combine.
  • Season with salt and pepper.

1 1/2 cups brown rice (long, medium or short)
1 small onion, finely chopped
1 tablespoon olive oil
1/2 teaspoon salt
2 1/2 cups low sodium chicken broth
1 ounce parmesan cheese, grated (about 1/2 cup)
1/4 cup fresh parsley, minced
1/8-1/4 cup fresh basil, minced (original is 1/4 cup)
1 lemon, juice and zest of (original is 1/2 tsp)
1/8-1/4 teaspoon ground black pepper

Steps:

  • Adjust an oven rack to the middle position.
  • Preheat oven to 375°F.
  • Spread rice in a 8x8 glass baking dish.

1 skinless bone-in chicken breast half
Coarse salt and freshly ground pepper
1 tablespoon all-purpose flour
3 garlic cloves, thinly sliced
1 cup grape tomatoes
3 to 4 ounces green beans, trimmed and halved crosswise
3 tablespoons chopped fresh mint

600 ml water
12 ounces long grain rice, washed and drained
1 teaspoon salt
6 ounces grated parmesan cheese
4 eggs
2 lemons, zest of
2 tablespoons lemon juice
1 ounce butter

  • Bring the water to the boil, then stir in the rice and the salt and boil for two minutes.
  • Lower the heat, cover the pan, and simmer for 15 to 20 minutes or until all the water is absorbed, turn off the heat and let the rice stand for a few minutes.
