2 tablespoons olive oil
8 tablespoons unsalted butter, 1 stick
4 cloves garlic, minced
1 teaspoon red pepper flakes
1 ¼ lb large shrimp
salt, to taste
pepper, to taste
1 teaspoon dried oregano
4 cups baby spinach
¼ cup parmesan cheese, grated
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice

Steps:

  • In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente.
  • Drain and set pasta aside.
  • In the same pan, heat olive oil and 2 tablespoons of butter. Add garlic and crushed red pepper, cook until fragrant.
  • Toss in shrimp, salt and pepper to taste, and stir until shrimp start to turn pink, but are not fully cooked.
  • Add oregano and spinach, cook until wilted.
  • Return cooked pasta to the pot, add remaining butter, parmesan, and parsley. Stir until well mixed and the butter is melted.

1 lb linguine (or thin-shaped pasta)
kosher salt
1 medium onion
8 garlic cloves
8 -10 sprigs fresh thyme
1 teaspoon olive oil
1/8 teaspoon crushed red pepper flakes
2 cups low sodium chicken broth
2 (8 ounce) bottles clam juice (16 ounces total)
1 bay leaf
3 -4 large lemons
6 fresh parsley sprigs
2 tablespoons cornstarch
2 tablespoons water
3 tablespoons low-fat cream cheese, at room temperature (do not use nonfat)
8 ounces chopped clams with juice, drained (may substitute 8 to 10 ounces of additional cooked, peeled and deveined shrimp)
freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over medium high heat; add pasta and cook according to the package directions.
  • Reserve 1/2 cup pasta cooking liquid, then drain the pasta and return it to the pot.
  • Cut the onion into small dice, mince the garlic, and chop the thyme.
  • In a large skillet, over medium heat, combine the onion, oil and 1/8 teaspoon salt; cook, stirring occasionally, until the onion begins to soften, about 8 to 10 minutes.
  • Stir in garlic, thyme, and red pepper flakes, cook about 30 seconds.
  • Add in chicken broth, clam juice, and bay leaf.
  • Increase heat to medium and cook until liquid has reduced to about 2 cups, 7 to 10 minutes.
  • Meanwhile, squeeze out 1/2 cup fresh lemon juice.
  • Chop parsley.
  • Whisk together cornstarch and water; stir into skillet.
  • Cook until slightly thickened, about 2 minutes; remove from heat.

1 pound dried whole-wheat linguine or thin-shaped pasta
Kosher salt
1 medium onion
8 cloves garlic
Leaves from 8 to 10 sprigs thyme
1 teaspoon olive oil
1/8 teaspoon crushed red pepper flakes
2 cups low-sodium chicken broth
2 bottles (16 ounces total) clam juice
1 bay leaf
3 or 4 large lemons
Leaves from 6 stems flat-leaf parsley
2 tablespoons cornstarch
2 tablespoons water
3 tablespoons low-fat cream cheese, at room temperature (do not use nonfat)
12 extra-large cooked (peeled and deveined) shrimp, defrosted
8 ounces chopped clams, such as Cape Cod brand (see headnote), drained (may substitute 8 to 10 ounces of additional cooked, peeled and deveined shrimp)
Freshly ground black pepper

Steps:

  • 1 Bring a large pot of salted water to a boil over medium-high heat
  • 2 Add the pasta and cook according to the package directions
  • 3 Drain the pasta and return it to the (dry) pot, reserving 1/2 cup of the pasta cooking water
  • 4 Meanwhile, cut the onion into small dice (about 1 cup)
  • 5 Mince the garlic cloves (about 2 1/2 tablespoons) and the thyme leaves (2 teaspoons)

  • 8 Add the garlic, thyme and crushed red pepper flakes, stirring to incorporate; cook for 30 seconds, then add the chicken broth, clam juice and bay leaf
  • 9 Increase the heat to medium; once the mixture begins to bubble at the edges, cook for 7 to 10 minutes, at which point the liquid/sauce should have reduced to 2 cups
  • 10 While the sauce is cooking, squeeze the lemons to yield 1/2 cup of juice
  • 11 Chop the parsley to yield 2 tablespoons
  • 12 Whisk together the cornstarch and water in a small bowl, then whisk it into the skillet
  • 13 Cook for about 2 minutes, whisking, until slightly thickened
  • 14 Remove from the heat

¾ cup kosher salt
1 gallon cold water
2 pounds peeled and deveined large shrimp (21 to 30 per pound)
1 (16 ounce) package angel hair pasta
¼ cup unsalted butter
¼ cup olive oil
3 tablespoons minced garlic
⅓ cup white wine
¼ cup lemon juice
½ teaspoon crushed red pepper flakes
1 teaspoon freshly ground black pepper
½ cup chopped fresh parsley
1 tablespoon lemon zest

Steps:

  • Dissolve the kosher salt in 1 gallon of water in a large pot. Add the shrimp, and refrigerate 2 to 4 hours. Drain and pat shrimp dry with paper towels.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. 2 tablespoons olive oil
2 cloves garlic, chopped
1 cup chicken broth
2 large lemon, zested and juiced
2 pounds uncooked medium shrimp, peeled and deveined

½ cup cream
4 tablespoons chopped fresh cilantro

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain and set aside.

This is an easy, wonderfully flavoured pasta dish that can be whipped up in no time for an intimate dinner for two. Recipe is easily doubled. I use my non-stick wok as it is big enough for tossing the pasta and sauce together in and the sauce gets distributed better throughout that way.

1 tablespoon olive oil
1 tablespoon butter
1 medium onion, chopped
3 garlic cloves, minced
1/2 teaspoon dried basil
1 small bay leaf
1/3 cup white wine
1 teaspoon fresh lemon rind
3 tablespoons fresh lemon juice
1 (6 1/2 ounce) can baby clams, drained, reserve juice
salt & fresh ground pepper
1/2 cup grated parmesan cheese
1 tablespoon chopped fresh parsley
linguine, enough for two, cooked, well drained, do not rinse

  • I usually make this in my non-stick wok.
  • Heat oil and butter on medium heat and saute onion and garlic until soft and tender, not brown.
  • Add basil and bay leaf.
  • Pour in wine, lemon rind, lemon juice and reserved clam juice.
  • Simmer until reduced a little (by about a third).
  • Add clams and heat through.
  • Toss in the cooked linguine a little at a time (don't make the mistake of adding too much or the sauce will be lost!) and lastly add the cheese and parsley.
  • Serve with more cheese on the side and red pepper flakes (optional) and warm garlic bread.
