When I was a kid, I was more picky about eating tomatoes on my sandwiches, and when my mom and younger sister and I got together to make up BLT's, I would sometimes leave off the tomato. Somewhere I learned that bacon was tasty with peanut butter, and so I started to eat bacon with peanut butter (I also eat bacon with maple syrup), and thus was born this new type of sandwich. Peanut butter (instead of mayo), lettuce, and bacon, on toast, and sandwiched together. I know it sounds a bit odd, but it's really yummy! I just wrote this out to serve 1 person, 1 sandwich. I like lots of bacon, and all my measurements are estimates, so please adjust accordingly to your taste/needs. Hope you enjoy this as much as I do! Although I should be eating turkey bacon instead of regular bacon, I have not yet tried this with turkey bacon.

1/2 cup reduced-fat peanut butter or 1/2 cup regular peanut butter
8 slices French bread (1/2-inch think)
2 tablespoons honey
2 medium bananas
2 beaten eggs
1/2 cup milk
1/4 teaspoon ground cinnamon
1 tablespoon butter or 1 tablespoon margarine
1/2 cup fruit preserves (any flavor) or 1/2 cup jam (any flavor)

Steps:

  • Spread peanut butter evenly onto one side of each slice of bread snd drizzle honey over the peanut butter.
  • Cut each banana in half lengthwise and then cut in half crosswise (8 pieces total). Arrange 2 banana pieces on 4 of the prepared bread slices.
  • Top with remaining bread slices, peanut butter-sides down.
  • In a shallow bowl combine eggs, milk, and cinnamon.
  • Carefully dip sandwiches into egg mixture, coating both sides.
  • Melt butter in a large skillet or on a large griddle over medium heat.
  • Cook sandwiches in hot butter about 2 minutes on each side or until golden.
  • Meanwhile, in a small saucepan heat fruit preserves over medium-low heat until melted, stirring frequently.

10 large eggs
1 pint heavy cream
1 teaspoon cinnamon
a pinch of nutmeg
1/4 cup maple syrup
1 teaspoon vanilla extract
1 loaf brioche bread- double thick cut into 12 slices
1 cup peanut butter
1 cup strawberry jam
6 tablespoons butter
6 scoops banana ice cream
1 cup chocolate syrup
1 pint strawberries
6 cherries
1 pint whipped cream

Steps:

  • Preheat oven to 300°F.
  • Mix heavy cream, cinnamon, nutmeg, maple syrup, vanilla, and eggs together and set aside.
  • Make sandwiches using bread, peanut butter and jam and soak in above mixture for 30 minutes. Turn the sandwiches over after 15 minutes to allow for even absorbtion of the cream mixture.   • In a large non-stick frying pan over medium heat, melt 1 tbsp butter. Crack in egg, season with salt and pepper and fry for 3-4 minutes.
