PEACH MELBA ALMOND CRISP

Peach Melba Almond Crisp image

Came up with this recipe by combining all of my favorite flavors: peach, raspberry and almond. I love a good apple crisp so I took my mom's apple crisp recipe and changed things up a bit. This combination is perfect because it's a tiny bit tart and the almond crumbles sweeten it up just enough.

PEACH-BLUEBERRY CRISP WITH ALMOND TOPPING

Provided by Beverley Williams

Categories     Fruit Desserts

Time 55m

Number Of Ingredients 10

3 1/2 c fresh peaches, peeled and sliced
2 c fresh or frozen blueberries
1 Tbsp all purpose flour
2 tsp lemon juice
1/4 c sugar
3/4 c old-fashioned oats
1/4 c all purpose flour
1/4 c sliced almonds
1/2 c sugar
4 Tbsp butter

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. In a 7 x 11 inch baking dish, combine peaches, blueberries, 1 Tbsp. flour, lemon juice and 1/4 cup sugar. Set aside.
  • 3. In a small bowl, combine oats, almonds, 1/4 cup flour and 1/2 cup sugar. Cut in butter and crumble on top of fruit mixture.
  • 4. Bake 30 to 40 minutes

Tips:

  • Choose ripe peaches. Ripe peaches will be soft to the touch and have a sweet, fragrant smell. Avoid peaches that are hard or bruised.
  • Peel the peaches if desired. Peeling the peaches is not necessary, but it will give the crisp a smoother texture. To peel the peaches, simply use a sharp knife to score a shallow X in the bottom of each peach. Then, place the peaches in a bowl of boiling water for 1-2 minutes. Remove the peaches from the boiling water and immediately transfer them to a bowl of ice water. The skins will then easily peel off.
  • Use a combination of almonds and oats. This will give the crisp a crunchy, nutty texture. You can use all almonds or all oats, but a combination of the two is ideal.
  • Add a little spice. A pinch of cinnamon or nutmeg will add a warm, autumnal flavor to the crisp.
  • Don't overcook the crisp. The crisp is done when the topping is golden brown and the peaches are bubbling. Overcooking will make the peaches mushy and the topping dry.

Conclusion:

Peach almond crisp is a delicious and easy-to-make dessert that is perfect for summer. It is made with fresh peaches, almonds, oats, and a simple spice blend. The crisp is baked until the topping is golden brown and the peaches are bubbling. Serve it warm with a scoop of vanilla ice cream for a truly special treat.
