4 ½ cups finely chopped, peeled peaches
2 tablespoons lemon juice
3 cups sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
⅓ cup amaretto liqueur, or more to taste

Steps:

  • Inspect 5 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Mix peaches with lemon juice in a large pot immediately after chopping to prevent peaches from turning brown. Place pot over medium heat.
  • Mix 1/4 cup of the sugar with pectin and add it to the pot with the peaches. Stir well. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Add the remaining sugar and stir well, scraping the bottom of the pot, to fully dissolve the sugar. Cook for 1 minute, stirring constantly.
  • Remove from heat and stir in amaretto liqueur.
  • Ladle peach jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

3 cups milk
1 1/2 quarts (6 cups) strawberries, sliced
1 large fresh peach, peeled and cubed
1/4 cup sugar
1 package (16 ounces) frozen pound cake loaf
1/4 cup peach or strawberry preserves
1/4 cup amaretto or orange juice
1 cup whipping (heavy) cream
1/4 cup slivered almonds, toasted
2 large fresh peaches, peeled and sliced

Steps:

  • Make pudding mix as directed on package for pudding, using 3 cups milk. Place plastic wrap directly on top of pudding. Refrigerate at least 2 hours until chilled.
  • Mix strawberries, cubed peach and sugar. Let stand at room temperature 15 minutes.
  • Cut pound cake horizontally in half. Spread preserves over bottom half. Top with top half. Cut into 18 slices. Drizzle with amaretto. Place 9 slices in 3- to 4-quart straight-sided glass bowl. Spoon half of strawberry mixture over cake.
  • Beat whipping cream in chilled small bowl with electric mixer on high speed until stiff. Fold whipped cream into pudding. Spoon half of pudding mixture over strawberries. Repeat layers with remaining cake, strawberry mixture and pudding mixture. Refrigerate at least 2 hours.
  • Just before serving, sprinkle with almonds. Top with sliced peaches.

6 large ripe peaches - peeled, pitted and sliced
1 tablespoon fresh lemon juice
2 (8 ounce) containers vanilla yogurt
1 teaspoon lemon zest
1 (10 inch) prepared angel food cake

Steps:

  • Place peaches in a large bowl, and gently toss with lemon juice. Place 1 cup of peaches in a blender, set aside remaining slices, and blend until smooth. Place yogurt into a bowl; stir in the peach puree and lemon zest until well blended.
  • Cut the angel food cake into squares and place half in the bottom of a glass dish. Spoon half of the peach slices over the cake. Cover with half of the yogurt mixture. 1/3 cup cornstarch
1/2 cup sugar
2 eggs, well beaten
3 1/2 cups milk
2 tablespoons butter
1 tablespoon vanilla extract
3/4 cup amaretto liqueur
2 poundcake
2 cups raspberry preserves
12 peach halves in syrup, cubed (1/2 the peaches may be substituted with 10 apricot halves)
whipped cream
toasted sliced almonds

Steps:

  • Mix cornstarch, sugar and eggs until well-blended.
  • Gradually stir in milk.
  • Add butter and cook over medium heat, stirring constantly, until custard thickens.
  • Remove from heat, cover and cool slightly.
  • Stir in vanilla and ½ cup liqueur.
  • Press plastic wrap directly over top of custard, cover and chill for several hours.
  • Cut cakes into ½ inch cubes.
  • Mix preserves with ¼ cup liqueur.
  • In an attractive crystal or glass bowl, layer half of the cake cubes, preserves and peaches.
  • Add half of custard.
  • Repeat layering and top off with remaining custard.
  • Chill, wrapped in clingfilm, for atleast one day before serving.
  • Just before serving, cover with whipped cream and lavishly sprinkle on toasted, sliced almonds.

3 tablespoons flour
1/4 cup sugar
2 cups milk
3 egg yolks, beaten
1 teaspoon vanilla
4 peaches, coarsely chopped
2 tablespoons amaretto liqueur
2 tablespoons peach liqueur
4 tablespoons orange juice
8 sponge cake shells
1 cup whipping cream
2 tablespoons sugar
peach slices
toasted almond

Steps:

  • To make the custard: Combine sugar and flour in heavy bottomed saucepan,add milk& beaten egg yolks.
  • Cook, stirring constantly over medium heat until thickened.
  • Remove from heat and stir in the vanilla.
  • Place wax paper directly on surface to prevent a skin forming,cool.
  • To assemble the trifle: Place 1/2 of the sponge cakes in the bottom of a glass serving bowl.
  • Pierce the cakes with a fork.
  • Sprinkle 1/2 combined liqueurs and juice over sponge cake.

For semifreddo
1 1/4 pound firm-ripe peaches
1 (500-mg) vitamin C tablet (ascorbic acid), crushed to a powder with back of a spoon
1/2 cup plus 2 tablespoons sugar, divided
6 large egg yolks
3/8 teaspoon pure almond extract
1 cup heavy cream
For peach topping
1 pound firm-ripe peaches
1 (500-mg) vitaminutes C tablet, crushed to a powder
1/4 cup sugar, or to taste
Equipment: a 9- to 9 1/2-inch (24-cm) round springform pan (2 inches deep); a handheld electric mixer

Steps:

  • Make crust:
  • Preheat oven to 350°F with rack in middle. Invert bottom of springform pan (to make it easier to slide semifreddo off bottom), then lock on side and oil pan.
  • Stir together ground amaretti and melted butter in a bowl until combined well, then press evenly over bottom and up side of springform pan. Bake until crust is firm and a shade darker, about 10 minutes. Cool completely in pan on a rack, 20 to 30 minutes. Leave oven on.
  • Make praline:
  • Spread nuts in a shallow baking pan and toast in oven, stirring once or twice, until fragrant and golden, about 10 minutes. Transfer nuts to a bowl. Lightly oil same baking pan.
  • Cook sugar in a heavy medium skillet over medium heat, stirring with a fork to heat sugar evenly, until it starts to melt, then stop stirring and cook, swirling skillet occasionally so sugar melts evenly, until it is a dark amber.
  • Immediately stir in nuts, then pour mixture into oiled baking pan and let stand to harden and cool completely, about 15 minutes.
  • Break praline into pieces, then pulse in cleaned food processor until finely chopped.
  • Make semifreddo:
  • Pit and coarsely chop peaches, with skins if desired, then purée in cleaned food processor with crushed vitaminutes C, 1/2 cup sugar, and 1/8 teaspoon salt. Force thourough a medium-mesh sieve set over a large metal bowl, pressing on and then discarding solids.
  • Stir in egg yolks, then place bowl over a saucepan of barely simmering water and beat with mixer until mixture is thick and pale and registers 140°F on an instant-read thermometer, then beat 3 minutes more (do not let boil).
  • Remove bowl from saucepan and set in a larger bowl of ice and cold water. Add almond extract and beat until cold, about 6 minutes.
  • Beat cream with remaining 2 tablespoons sugar in another bowl using cleaned beaters until it just holds soft peaks.
  • Fold one third of cream into peach mixture, then fold in praline and remaining cream gently but thoroughly. Pour mixture into cooled crust and freeze, covered with plastic wrap, until firm, at least 3 hours. Let stand in refrigerator 30 minutes to 1 hour before serving.
  • Make peach topping while semifreddo stands in refrigerator:
  • Cut an X in bottom of each peach, then blanch in a medium saucepan of boiling water 10 seconds. Transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Peel peaches and cut into 1/2-inch wedges.
  • Toss peaches with crushed vitaminutes C and sugar and let stand, stirring occasionally, until sugar is dissolved, about 10 minutes.
  • Spoon peaches over semifreddo with a slotted spoon just before serving.

1 cup confectioners' sugar
2 cups heavy whipping cream
Optional toppings: Toasted sweetened shredded coconut and/or sliced almonds

Steps:

  • In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. , Drop by heaping tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake at 250° for 32-38 minutes or until firm to the touch. Turn oven off; leave meringues in oven for 1 hour. 4 tablespoons brandy

1/4 cup powdered sugar

Steps:

  • For pastry cream:
  • Combine cream and milk in medium saucepan; bring to simmer. Remove from heat. Whisk sugar, egg yolks, flour, amaretto, vanilla, and salt in large bowl until smooth (mixture will be thick and pasty). Gradually whisk hot cream mixture into yolk mixture. Return mixture to saucepan. Whisk over medium heat until pastry cream boils, thickens and is smooth, about 6 minutes. Transfer pastry cream to bowl. Press plastic wrap directly onto surface of pastry cream; refrigerate overnight.
  • For pears:
  • Position rack in center of oven and preheat to 400°F. Toss pear halves, 1/3 cup sugar, and lemon juice in large bowl. Place pears, cut side down, on heavy large rimmed baking sheet; pour sugar mixture from bowl over pears. Roast pears until tender and golden brown in spots, turning occasionally, about 40 minutes. Cool. Cut pears into 1/2-inch pieces; place in bowl along with any juices from baking sheet. (Pears can be made 1 day ahead. Cover and chill.)
  • Arrange 13 to 14 ladyfingers in bottom of 8-inch-diameter, 3-quart trifle bowl, trimming to fit tightly. Sprinkle 1/2 cup crushed amaretti cookies over. Dot with 1/4 cup fruit spread. Top with 1 cup roasted pears. Drizzle 1 tablespoon brandy and 1 tablespoon amaretto over. Spread 1 cup pastry cream over. Repeat layering 2 more times with ladyfingers, amaretti cookies, fruit spread, pears, brandy, amaretto, and pastry cream. Top with 13 to 14 ladyfingers; sprinkle with remaining brandy and amaretto. Spread remaining pastry cream over top. Cover and refrigerate until cold, about 4 hours.
  • Beat cream, powdered sugar, and vanilla in large bowl until peaks form. Spread 1 1/2 cups whipped cream over top of trifle. Spoon remaining whipped cream into pastry bag fitted with medium star tip. Pipe whipped-cream rosettes around top of trifle. Garnish with sliced almonds and mint sprigs, if desired. Refrigerate up to 6 hours.
  • Amaretti cookies are available at Italian markets and some supermarkets.
