6 cups sliced peeled ripe peaches
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon lemon juice
1/2 teaspoon grated lemon zest
1/2 teaspoon ground cinnamon
TOPPING:
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 large egg, room temperature, lightly beaten
1/2 cup butter, melted and cooled
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. Place peaches in a greased shallow 2-1/2-qt. Dutch oven, cast-iron pan or 2-1/2-qt. ovenproof baking dish. In a small bowl, combine brown sugar, flour, lemon juice, zest and cinnamon; sprinkle over the peaches. , Combine flour, sugar, baking powder, salt and nutmeg. Stir in egg until the mixture resembles coarse crumbs. Sprinkle over the peaches. Pour butter evenly over topping. , Bake 35-40 minutes. If desired, serve with ice cream.

2 cups cubed fresh pineapple
2 medium kiwifruit, peeled and sliced
1 cup green grapes
1 cup red grapes
3/4 cup peach or apricot nectar
1/4 cup honey
2 tablespoons lemon juice
2 tablespoons balsamic vinegar

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, whisk the peach nectar, honey, lemon juice and vinegar; drizzle over fruit and toss to coat. Chill until serving.

1/2 cup packed brown sugar
3 tablespoons cornstarch
1/4 teaspoon ground mace
1/4 cup sherry or unsweetened apple juice
5 cups sliced peeled peaches
1 cup fresh or frozen blueberries
1/2 cup chopped pecans
1 tablespoon butter
1 tablespoon lemon juice
TOPPING:
1 cup all-purpose flour
1/3 cup sugar
1-1/2 teaspoons baking powder
Dash salt
1/4 cup cold butter, cubed
1/4 cup milk
1 egg, lightly beaten

Steps:

  • In a large saucepan, combine the brown sugar, cornstarch and mace. Stir in sherry until blended. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the peaches, blueberries, pecans, butter and lemon juice. Pour into a greased shallow 2-qt. baking dish. , For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until coarse crumbs form. Stir in milk and egg. Spoon over fruit mixture. , Bake at 400° for 25-30 minutes or until bubbly and a toothpick inserted in the topping comes out clean. This cobbler is a very smooth and custard-like dessert that is DELICIOUS. Grandma always made this for us because it was very easy and economical. Serve piping hot from the oven with vanilla ice cream melting over the top. This is an unbelievably delicious dessert! You can also substitute almost any other fruit for the peaches.

1 1/2 cups sugar, divided
1/4 cup shortening or 1/4 cup butter
2 tablespoons cream or 2 tablespoons milk
1 teaspoon vanilla
1 cup flour
1 1/2 cups milk
2 teaspoons baking powder
1/2 teaspoon salt
1 (15 ounce) can peaches, reserve all juice

Steps:

  • Cream together 1/2 cup sugar with shortening, cream, and vanilla.
  • Add flour, milk, baking powder and salt; mix well until smooth.
  • Pour batter into greased 9 x 13-inch pan.
  • Place sliced or chopped peaches evenly over batter.
  • Sprinkle top with 1 cup sugar (yes, a whole cup!).
  • Mix peach juice with enough water to measure one cup and bring to a boil, then pour evenly over the top of the pan. (This will look wrong and very watery, but trust me!).
  • Bake at 350°F for 35 minutes or until top is light golden brown.

An easy cake that is moist and has a delightful streusel topping. I found this in a Pillsbury Kitchens' cookbook. My guests always enjoy it.

1 cup all-purpose flour
2/3 cup brown sugar, firmly packed
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup sour cream
1 teaspoon vanilla
1 egg
1 (16 ounce) can peaches, sliced, well drained
1/2 cup chopped walnuts or 1/2 cup pecans
1/2 cup coconut
1/3 cup brown sugar, firmly packed
2 tablespoons margarine or 2 tablespoons butter

Steps:

  • Heat oven to 375°F.
  • Generously grease the bottom only of an 8 or 9 inch square pan.
  • In medium bowl, blend the ingredients for the cake EXCEPT for the peaches. Blend at low speed until moistened. Beat 1 minute at medium speed.
  • Pour batter into prepared pan and arrange the peach slices over the batter.
  • In a small bowl, mix the topping ingredients until crumbly. Sprinkle over the peaches.
  • Bake at 375F for 35-45 minutes or until a toothpick inserted in the center comes out clean.
  • Cool 30 minutes. Cut into squares and serve warm with either ice cream or fresh whipped cream.
